ATTITUDES OF GRANGERS, WHOLESALERS, RETAILERS AND CONSUMERS TOWARD THE SANITARY QUALITY OF IN NATURA CHICKEN EGGS

Resumo: One of the greatest concerns at the moment is the question of food safety, since, despite great technological innovations in the production, storage and distribution phases, food poisoning cases continue to occur at an increasing rate. The objective of this work was to analyze the attitudes of consumers, retailers, wholesalers and producers toward the sanitary quality of in natura chickeneggs. In all, 152 women, 39 retail establishments (24 supermarkets, 3 hypermarkets, 6 open-air markets, 3 municipal retailers and 3 private retailers), 7 wholesalers and 7 grangers were interviewed. This survey showed that more than 50% of the women interviewed presented equivocal knowledge with respect to the size of the egg, the origin of the product and the color of the shell. Refrigeration, an extremely important point concerning sanitary quality, was also incorrectly evaluated by almost 50% of the women interviewed. The questions of product origin, cleanliness and integrity of the shell, packaging and time for commercialization were correctly evaluated by more than 50% of the wholesalers interviewed, in opposition to the items refrigeration and best before date, cited as less important than the former items by those interviewed. In the case of the producers, refrigeration was the only itemconsidered incorrectly. These results suggest the need for the implementation of campaigns focussed on education.

These results suggest the need for the implementation of campaigns focussed on education.Uma das grandes preocupações atuais tem sido a questão da segurança do alimento, pois, apesar das inovações tecnológicas na fase de produção, armazenamento e distribuição, quadros de toxinfecção alimentar continuam ocorrendo e de forma crescente. Este trabalho teve como objetivo analisar a atitude dos consumidores, assim como de varejistas, atacadistas e produtores, em relação à qualidade sanitária do ovo de galinha in natura. Foram entrevistadas 152 consumidoras, 39 estabelecimentos varejistas (24 supermercados, 3 hipermercados, 6 feiras livres, 3 varejões municipais e 3 varejões particulares), 7 atacadistas e 7 granjeiros. Esta pesquisa mostrou que o tamanho do ovo, a procedência do produto e a cor da casca foram os aspectos sobre os quais mais de 50% das mulheres entrevistadas apresentaram conhecimentos equivocados. A refrigeração, que é um ponto importantíssimo para a qualidade sanitária desse alimento, também não foi avaliada corretamente por quase 50% das consumidoras. A procedência do produto, limpeza e integridade da casca, embalagem do ovo e tempo de comercialização, no caso dos atacadistas, foram fatores analisados corretamente por mais da metade dos entrevistados, contrapondo-se aos itens refrigeração e prazo de validade, apontados como de menor importância que os anteriores. No caso dos produtores, a refrigeração foi o único aspecto que não foi considerado corretamente.
