Gastronomic routes in Portugal: opportunities and future challenges

Resumo: Gastronomic tourism has been assuming an increasingly important role in territories which aim to become tourist destinations. It covers a wide range of experiences, such as gastronomic routes, which have emerged worldwide, and Portugal is no exception. Gastronomic routes mitigate seasonality, diversify the tourist offer, attract visitors to less developed territories in terms of tourism, and improve the populations' quality of life. Given the vital role that gastronomic routes play in the sustainability of territories, it is essential to understand how they are being created, developed, and explored. Since there is no single centralized source of information on Portuguese routes, this study identifies 15 gastronomic routes in Portugal. The routes were analyzed according to six criteria. It was concluded that routes spread throughout the national territory, which occur throughout the year, encompassing different regional products and diversified members. However, they are still a small number, and they do not always take advantage of all the territory's characteristics.

Este produto apresenta um conjunto diversificado de experiências, das quais se destacam as rotas gastronómicas. Estas proliferam um pouco por todo mundo e Portugal não é exceção, sendo vistas como possíveis instrumentos de combate à sazonalidade, diversificando a oferta turística, atraindo visitantes para territórios menos desenvolvidos em termos turísticos e contribuindo para a melhoria das condições de vida das populações. Tendo em conta o importante papel que as rotas gastronómicas podem desempenhar para a sustentabilidade dos territórios, importa perceber como estão a ser criadas, desenvolvidas e aproveitadas. Não existindo uma fonte única centralizada com informação relativa às rotas portuguesas, este estudo apresenta o levantamento e análise de 15 rotas gastronómicas existentes em Portugal continental. Estas foram analisadas de acordo com seis parâmetros previamente estabelecidos que permitiram concluir que existem rotas espalhadas por todo o território nacional, que ocorrem durante todo o ano, englobando diferentes produtos regionais e aderentes diversificados.
