L'objectif principal de ce travail est la valorisation du patrimoine lié à la production du mezcal bacanora, une boisson alcoolisée ancestrale produite dans l'État de Sonora, au nord du Mexique. Cette valorisation s'appuie tout d'abord sur une caractérisation et une documentation des éléments qui intègrent la production de ce mezcal. Ces composantes comprennent les aspects géographiques du territoire, les aspects biologiques et physiques de l'Agave angustifolia Haw, les aspects historiques de la production et les aspects socioculturels associés au mezcal et à l'agave. Deuxièmement, la proposition d'un centre d'interprétation du bacanora. La création de ce centre d'interprétation aiderait les visiteurs à comprendre l'importance du mezcal en tant qu'élément de l'identité, de l'histoire et de la tradition de Sonora. En ce qui concerne le cadre théorique, la notion de patrimoine, le patrimoine culturel et industriel et la valorisation du patrimoine ont été étudiés afin de comprendre les fondements qui permettent de considérer le bacanora comme un patrimoine. D'autre part, une analyse de la gastronomie mexicaine a été réalisée afin de comprendre la place des mezcals en son sein et donc du bacanora mezcal; Title - The production of bacanora mezcal (Sonora). Heritage enhancement and cultural challenges Abstract: The main objective of this work is the valorization of the heritage related to the production of mezcal bacanora, an ancestral alcoholic drink produced in the state of Sonora, in the north of Mexico. This valorization is based first of all on a characterization and documentation of the elements that integrate the production of this mezcal. These components include the geographical aspects of the territory, the biological and physical aspects of the Agave angustifolia Haw, the historical aspects of production and the socio-cultural aspects associated with mezcal and agave. Second, the proposal for a bacanora interpretation center. The creation of this interpretive center would help visitors understand the importance of mezcal as part of Sonora's identity, history, and tradition. In terms of theoretical framework, the concept of heritage, cultural and industrial heritage and heritage valorization were studied to understand the basis for considering bacanora as heritage. On the other hand, an analysis of the Mexican gastronomy was carried out to understand the place of the mezcals in it and therefore of the bacanora mezcal.
