Mezcal as a social heritage: from generic geographical indications to regional appellations of origin

Resumo: The article discusses the trajectory of the Mezcal Appellation of Origin in Mexico, in the contemporary context: the recent extension of the Official Declaration and the updating of Official Mexican Standard 070 (NOM 070). Based on fieldwork in several regions applying anthropological methodologies, we propose to think in Regional Apellations of Origin, to recover the diversity of forms to make mezcal. One way to achieve this is by defining the categories of Artisanal and Ancestral, and in the translation of each one to the regional contexts where these drinks are made.

Con base en trabajo de campo de corte antropológico realizado en algunas regiones productoras de mezcal proponemos pensar en Denominaciones de Origen de carácter Regional, para recuperar la diversidad de formas de elaborar mezcal. Una manera de lograrlo es mediante la definición de las categorías de mezcal artesanal y ancestral, así como en su traducción a cada uno de los contextos regionales donde se elaboran esas bebidas.O artigo discute a trajetória da Denominação de Origem Mezcal no México, a partir da extensão da Declaração Oficial e da atualização do Padrão Oficial Mexicano 070. Com base no trabalho de campo antropológico realizado em algumas regiões produtoras de mezcal, propomos pense nas Denominações de Origem Regionais, para recuperar a diversidade de formas de elaborar mezcal.
