Resumo: | This paper explores the analytical interlocution with the reception of the Algarve gastronomy by the neoresidents from the EU-15 countries.We do not intend to draw a physicalist perspective to follow the various versions analysis of the phenomenon. Instead, we will seek to understand an implicated phenomenological frameset as cultural melting pot, generating touristic attractiveness in spaces, in which the phenomenon of tourism is devised as intercultural practice. And if tourism feeds on ideocultures, it seems relevant to include gastronomy in a structured vision of tourism, expanding it into a “social spatiality” implicated in the dimming of cultural frontiers between peoples. This paper is based on the analysis of the structured interviews made to 42 associations in the Algarve region, whose members are mostly neo-residents. As part of their research in the government-funded R&D project called “Touristic cultures of neo-residents in the Algarve”, the authors applied content analysis to the empirical data gathered, which covers the transmigratory experience of the individuals interviewed, since the 1980’s.The most expressive results suggest an association between the role of local food as a positive cultural attribute, added to the fact that it facilitates the incorporation of individuals in a new residential space, although it doesn’t occupy, yet, a role of indisputable centrality. This highlights the need of a more expressive “cultural intermediation” in this domain, otherwise we would be disregarding a potential aggregator of a touristic advantage. |

Neste artigo, promove-se a interlocução analítica com a recetividade da gastronomia algarvia, por parte dos neorresidentes provenientes de EU a 15. Não se trata de esboçar uma perspetiva fisicalista que acompanha tantas versões correntes de análise do fenómeno, mas de, neste património intangível, perceber um quadro fenomenológico implicado como cadinho cultural generativo de atração turística dos espaços, no que o fenómeno turístico é divisado como prática intercultural. E se o turismo se alimenta de ideo-culturas, faz todo o sentido pensar que a gastronomia esteja numa visão estruturada da coisa turística, expandindo-a numa “espacialidade social” implicada no esbatimento de fronteiras culturais entre povos.O artigo assenta numa entrevista estruturada, dirigida a um conjunto de 42 associações da região algarvia, maioritariamente compostas por neorresidentes, e o respetivo tratamento através de análise de conteúdo. Para isso, os autores serviram-se de um subconjunto de dados empíricos imbricados num projeto intitulado “culturas turísticas dos neorresidentes em contexto algarvio”, apoiado pela FCT, que preconiza uma dimensão temporal de análise da experiencia transmigratória dos referidos indivíduos, recuada aos anos 80.Os resultados mais expressivos sugerem uma associação entre o papel da gastronomia local como atributo cultural positivo, somado ao facto de ela desempenhar um papel facilitador da incorporação dos indivíduos num novo espaço residencial, ainda que não revestido de uma centralidade invejável. Nele plasma-se a necessidade de uma “intermediação cultural” mais expressiva no domínio, sob pena de se deixar em falha um potencial agregador de uma mais-valia turística.
