Resumo: | Sensory analysis is an essential tool in the wine evaluation. Although it has a long tradition, scientific methods for the control of sensory analysis are scarce and often not practical. This paper presents some new procedures that were developed during the accreditation process of the Tasting Panel of the Port Wine Institute. |
