Meat consumption and sanitary information in the State of Rio de Janeiro, Brazil

E-mail: raul_carvalho@uol.com.br This research was based on a survey among meat consumers in the period from 2008 to 2009. It was used 913 questionnaires, 656 in Niteroi and 257 in San Francisco of Itabapoana, districts of Rio de Janeiro state, Brazil, selected by their development indices particularly the IDHM. The questionnaires consisted of 16 questions with subdivisions in some of them where it was inquired about the consumer profile, their habits, choices and knowledge of the meat as food. Data were treated statistically revealing that the most consumed meat in the two cities is bovine meat, with a percentage of 36.6% and 52.5%, followed by poultry with 34.6% and 23%, by fish with 2.6% and 7,8% and swine with insignificant rates of 0.3% and 0%, respectively for Niteroi and San Francisco of Itabapoana. Other data was measured: knowledge of competence and action of the sanitary inspection agencies in the three spheres of government. The result was threatening due to the misinformation of these issues with negative indices as follows: for SIF 51% and 72.8%, for SIE 83.2% and 96.9%, and for SIM 92% and 99.2%, respectively, concerning Niteroi and San Francisco of Itabapoana districts. However, Municipal Health Surveillance is presented as an activity rather internalized by the interviewers on who takes care of public health issues in the district. |

However, Municipal Health Surveillance is presented as an activity rather internalized by the interviewers on who takes care of public health issues in the district.A pesquisa foi dirigida a consumidores, aleatoriamente, no período entre 2008/2009, com a aplicação de 913 inquéritos sendo 656 em Niterói e 257 em São Francisco de Itabapoana, municípios do Estado do Rio de Janeiro, selecionados por polarizarem em diversos índices de desenvolvimento, particularmente o índice de desenvolvimento humano - IDH. O inquérito constava de 16 itens, alguns subdivididos, sobre o perfil do consumidor, seus hábitos, escolhas e conhecimentos sobre as carnes como alimento e a respeito dos controles sanitários exigidos. Os dados obtidos foram tratados estatisticamente revelando que a carne mais consumida nos dois municípios é a bovina, com um percentual de 49,4% e 63,15%; seguida da de aves com 46,7% e 27,6%; a de pescado com 3,5% e 9,3% e a suína com índices insignificantes de 0,4% e 0%, respectivamente, em Niterói e S. F. de Itabapoana. Quanto ao conhecimento sobre a competência e a ação dos órgãos fiscalizadores da inspeção sanitária, nas três esferas de governo, o resultado foi alarmante com relação à desinformação sobre estas questões nas suas esferas de competência com índices negativos, a saber: SIF 51% e 72,8%, para o SIE 83,2% e 96,9% e para o SIM 92% e 99,2%, respectivamente, para Niterói e S. F. de Itabapoana.
