The present work was accomplished in a slaughterhouse unit of high capacity located in the city of Goiânia, state of Goiás. The main objective is to introduce projects that reduce the generation of solids, liquids or gaseous residues. In this manner, it was accomplished a data collection and description of the industrial processes, that resulted in the reduction of generation of solid and liquid residues have already been put into execution and their monitoring process has presented satisfactory results. It was obtained a reduction of 20% in the water consumption. In that way, the industry has presented progress regarding to the environmental management. The reuse of the rumen as fuel solved the problem that is caused by the great quantity of this residue generated in the process. The project of reduction of methane emission (responsible for the global heating) is still in elaboration and analysis of the economical viability, since it represents a great investment. These changes aim to reach the best possible efficiency in the use of the natural resources and, in that way, move in the direction of the sustainable development.
