Sentidos e práticas do consumo dos alimentos da agricultura familiar por atores gastronômicos na cidade do Rio de Janeiro

Resumo: Gastronomy has emerged as an important and complex phenomenon in contemporary societies. Its practices go beyond the dynamics of the kitchen and become a potential space for us to analyze, not just the aesthetics at the table, but values and symbolism that are an expression of historically deep-seated social relations. To achieve, at first, we seek to understand issues related to the food system and agricultural production in Brazil. In a second moment, we present the trajectory of gastronomy, understanding it as a cultural expression and we go through some studies that approach the interplay between gastronomy and family farming. The theoretical and methodological paths intersect with the concepts of consumption and distinction of Néstor García Canclini and Pierre Bourdieu, respectively. We turn to national authors such as Fatima Portilho who position food consumption as a way to materialize and draw attention to public values and concerns such as environmental and social ones. From these theoretical lenses and the research scenario centered on restaurants in the city of Rio de Janeiro, we seek to analyze the interactions established between family farming producers and gastronomic players. In order to carry out this study, an integrative literature review, analysis of digital content, observation and interviews with Chefs who subscribe to family farming and their respective producers were used as research techniques. For optimal insights on the referred landscape, data analysis was performed based on the procedures described by John W. Creswell. When analyzing the literature, we saw a lack of studies relating to food production and contemporary Brazilian gastronomy in the field of Food and Nutrition. In the process of investigating the dynamics between gastronomy and family farming, we noticed two stronger discourses succeeding, one that stands out in large circulation newspapers and is linked to the maintenance of consumption patterns and another in independent newspapers that includes the discussion policy on inequality in the distribution of resources. The field research was in agreement with the results found in the journalistic narratives in relation to the consumption of food from family farming, which was centered on certain products considered unique and capitalizes on the Chefs, while making the farmers invisible. The results demonstrate that it is relevant to look at the uptake of products from family farming as objects of consumption and distinctive codes. The research findings provide elements for the debate on the use of these foods and the interaction that is established between gastronomic players and farmers as a scientific problem, it can contribute to the discussion of social problems arising from the current model of the dominant food system, as well as from potential alternatives.

Para atingir seu propósito, em um primeiro momento, buscamos compreender questões relacionadas ao sistema alimentar e à produção agrícola no Brasil. Em um segundo momento, apresentamos a trajetória da gastronomia, entendendo-a como um produto cultural, e percorremos alguns estudos que abordam a aproximação da gastronomia com os produtores familiares. O percurso teórico metodológico dialogou com os conceitos de consumo e distinção do cotidiano de Néstor García Canclini e Pierre Bourdieu, respectivamente. Recorremos a autores nacionais, como Fátima Portilho, que posicionam o consumo alimentar como uma forma de materializar e tornar públicos valores e preocupações, como as ambientais e sociais. A partir dessas lentes teóricas e do cenário de pesquisa centrado nos restaurantes da cidade do Rio de Janeiro, buscamos analisar as interações estabelecidas entre produtores da agricultura familiar e atores gastronômicos. A fim de contemplar os objetivos, foram utilizadas como técnicas de investigação a revisão integrativa de literatura, a análise de conteúdos digitais, observação e entrevistas com chefes de cozinha que usam produtos oriundos da agricultura familiar e respectivos produtores. Para a compreensão de sentidos, foi realizada a análise dos dados ancorada em procedimentos de métodos qualitativos descritos por John W. Creswell. Ao analisar a produção acadêmica, vimos uma escassez de estudos relacionando a produção de alimentos à gastronomia contemporânea brasileira no campo da Alimentação e Nutrição. No processo de investigação da construção dos sentidos entre a gastronomia e a agricultura familiar, notamos sucederem dois discursos mais fortes: um que se destaca em jornais de grande circulação e está ligado à manutenção dos padrões de consumo e um outro nos jornais independentes que inclui a discussão política sobre a desigualdade na distribuição de recursos. A pesquisa de campo foi ao encontro dos resultados encontrados nas narrativas jornalísticas em relação ao consumo de alimentos provenientes da agricultura familiar, que mostrou-se centrado em determinados produtos considerados singulares e que capitaliza os chefes, ao passo que invisibiliza os agricultores. Os resultados demonstram ser relevante o olhar para os usos dos alimentos provenientes da agricultura familiar como objetos de consumo e códigos distintivos. As descobertas da pesquisa fornecem elementos para o debate do uso desses alimentos e para a interação que se estabelece entre atores gastronômicos e agricultores. Pour atteindre son objectif, dans un premier temps, nous cherchons à comprendre les enjeux liés au système alimentaire et à la production agricole au Brésil. Dans un deuxième temps, nous présentons la trajectoire de la gastronomie, en la comprenant comme un produit culturel et nous passons en revue quelques études qui abordent le rapprochement de la gastronomie avec les producteurs familiaux. Le parcours théorique méthodologique a dialogué avec les concepts de consommation et de distinction de Néstor García Canclini et Pierre Bourdieu, respectivement. Nous nous tournons vers des auteurs nationaux tels que Fatima Portilho qui positionnent la consommation alimentaire comme un moyen de matérialiser et de rendre publiques des valeurs et des préoccupations telles que celles environnementales et sociales. À partir de ces prismes théoriques et du scénario de recherche centré sur les restaurants de la ville de Rio de Janeiro, nous cherchons à analyser les interactions établies entre producteurs agricoles familiaux et acteurs gastronomiques. Afin de contempler les objectifs, la revue intégrative de la littérature, l'analyse des contenus numériques, l'observation et les entretiens avec des chefs utilisant des produits issus de l'agriculture familiale et leurs producteurs respectifs ont été utilisés comme techniques de recherche. Pour la compression des significations, l'analyse des données a été effectuée sur la base des procédures décrites par John W. Creswell. Lors de l'analyse de la production académique, nous avons constaté un manque d'études sur la production alimentaire et la gastronomie brésilienne contemporaine dans le domaine de l'alimentation et de la nutrition. Dans le processus d'investigation de la construction de sens entre gastronomie et agriculture familiale, nous avons remarqué deux discours plus forts qui se succèdent, l'un qui se démarque dans les journaux à grand tirage et est lié au maintien des modes de consommation et un autre dans les journaux indépendants qui inclut la politique de discussion sur inégalités dans la répartition des ressources.La recherche de terrain était en accord avec les résultats trouvés dans les récits journalistiques par rapport à la consommation des aliments issus de l'agriculture familiale, elle s'est montrée focalisée sur certains produits considérés comme uniques et capitalise sur les chefs, tout en rendant les agriculteurs invisibles. Les résultats montrent qu'il est pertinent de s'intéresser aux usages des aliments issus de l'agriculture familiale comme objets de consommation et codes distinctifs. description Gastronomy has emerged as an important and complex phenomenon in contemporary societies. Its practices go beyond the dynamics of the kitchen and become a potential space for us to analyze, not just the aesthetics at the table, but values and symbolism that are an expression of historically deep-seated social relations. To achieve, at first, we seek to understand issues related to the food system and agricultural production in Brazil. In a second moment, we present the trajectory of gastronomy, understanding it as a cultural expression and we go through some studies that approach the interplay between gastronomy and family farming. The theoretical and methodological paths intersect with the concepts of consumption and distinction of Néstor García Canclini and Pierre Bourdieu, respectively. We turn to national authors such as Fatima Portilho who position food consumption as a way to materialize and draw attention to public values and concerns such as environmental and social ones. From these theoretical lenses and the research scenario centered on restaurants in the city of Rio de Janeiro, we seek to analyze the interactions established between family farming producers and gastronomic players. In order to carry out this study, an integrative literature review, analysis of digital content, observation and interviews with Chefs who subscribe to family farming and their respective producers were used as research techniques. For optimal insights on the referred landscape, data analysis was performed based on the procedures described by John W. Creswell. When analyzing the literature, we saw a lack of studies relating to food production and contemporary Brazilian gastronomy in the field of Food and Nutrition. In the process of investigating the dynamics between gastronomy and family farming, we noticed two stronger discourses succeeding, one that stands out in large circulation newspapers and is linked to the maintenance of consumption patterns and another in independent newspapers that includes the discussion policy on inequality in the distribution of resources. The field research was in agreement with the results found in the journalistic narratives in relation to the consumption of food from family farming, which was centered on certain products considered unique and capitalizes on the Chefs, while making the farmers invisible. The results demonstrate that it is relevant to look at the uptake of products from family farming as objects of consumption and distinctive codes. The research findings provide elements for the debate on the use of these foods and the interaction that is established between gastronomic players and farmers as a scientific problem, it can contribute to the discussion of social problems arising from the current model of the dominant food system, as well as from potential alternatives.

Dans un deuxième temps, nous présentons la trajectoire de la gastronomie, en la comprenant comme un produit culturel et nous passons en revue quelques études qui abordent le rapprochement de la gastronomie avec les producteurs familiaux. Le parcours théorique méthodologique a dialogué avec les concepts de consommation et de distinction de Néstor García Canclini et Pierre Bourdieu, respectivement. Nous nous tournons vers des auteurs nationaux tels que Fatima Portilho qui positionnent la consommation alimentaire comme un moyen de matérialiser et de rendre publiques des valeurs et des préoccupations telles que celles environnementales et sociales. À partir de ces prismes théoriques et du scénario de recherche centré sur les restaurants de la ville de Rio de Janeiro, nous cherchons à analyser les interactions établies entre producteurs agricoles familiaux et acteurs gastronomiques. Afin de contempler les objectifs, la revue intégrative de la littérature, l'analyse des contenus numériques, l'observation et les entretiens avec des chefs utilisant des produits issus de l'agriculture familiale et leurs producteurs respectifs ont été utilisés comme techniques de recherche. Pour la compression des significations, l'analyse des données a été effectuée sur la base des procédures décrites par John W. Creswell. Lors de l'analyse de la production académique, nous avons constaté un manque d'études sur la production alimentaire et la gastronomie brésilienne contemporaine dans le domaine de l'alimentation et de la nutrition. Dans le processus d'investigation de la construction de sens entre gastronomie et agriculture familiale, nous avons remarqué deux discours plus forts qui se succèdent, l'un qui se démarque dans les journaux à grand tirage et est lié au maintien des modes de consommation et un autre dans les journaux indépendants qui inclut la politique de discussion sur inégalités dans la répartition des ressources.La recherche de terrain était en accord avec les résultats trouvés dans les récits journalistiques par rapport à la consommation des aliments issus de l'agriculture familiale, elle s'est montrée focalisée sur certains produits considérés comme uniques et capitalise sur les chefs, tout en rendant les agriculteurs invisibles. Les résultats montrent qu'il est pertinent de s'intéresser aux usages des aliments issus de l'agriculture familiale comme objets de consommation et codes distinctifs. Les résultats de la recherche fournissent des éléments pour le débat sur l'utilisation de ces aliments et l'interaction qui s'établit entre les acteurs gastronomiques et les agriculteurs en tant que problème scientifique, il peut contribuer à la discussion des problèmes sociaux découlant du modèle actuel du système alimentaire dominant, ainsi que des alternatives potentielles.
