Scientific and Technological Prospection on Edible Coatings of Polysaccharides for Food Preservation

Resumo: | The food industry is interested in sustainable technologies, such as the use of biodegradable coatings that can be applied in food preservation. Therefore, the current study carried out a prospection about edible coatings obtained from a biopolymer, consulting the following databases: WIPO, INPI, Web of Science and Scopus. The terms added in the search were starch coatings, pectin, chitosan and gums, the selected term was "Edible Coating Chitosan". It was found that patents on chitosan edible coatings are recent, China showed the highest number of filings in WIPO, while Brazil showed productions from 2016 to 2020 in INPI. In the article databases, Brazil stands out with scientific productions, revealing its potential with more than 90 studies and the participation of several national research institutions. The results also provided a visualization of the article segments, finding trends for the addition of essential oils and plant extracts in chitosan coatings. It was concluded that these coatings have promising applications, consolidating in a current and necessary theme for food conservation. |

Então, o presente estudo realizou uma prospecção sobre recobrimentos comestíveis obtidos de um biopolímero, consultando os seguintes bancos de dados: WIPO, INPI, Web of Science e Scopus. As expressões adicionadas na pesquisa foram “recobrimentos de amido”, “pectina”, “quitosana e gomas”, o termo selecionado foi “Edible Coating Chitosan”. Verificou-se que as patentes sobre os revestimentos comestíveis de quitosana são recentes, a China apresentou maior número de depósitos no WIPO, enquanto o Brasil apresentou produções de 2016 a 2020 no INPI. Nos bancos de dados dos artigos, o Brasil ficou em destaque com produções científicas, revelando seu potencial com mais de 90 estudos e participação de diversas instituições nacionais de pesquisa. Os resultados também possibilitaram uma visualização dos segmentos dos artigos, encontrando tendências para adição de óleos essenciais e extratos vegetais nos revestimentos de quitosana.
