Resumo: Microbiological and physical-chemical analysis were performed on 1,038 samples of whole milk pasteurized by long-time low temperature process in rural properties from the Goiás State. The results showed that 8.19% of samples were out of the standard set by the Brazilian legislation for mesophylic aerobic microorganisms count, 15.13% for NMP of total coliform determination and 13.29% for NMP of fecal coliform. In relation to physical-chemical analysis, acidity and freezing-point tests showed high number of samples out of the standard set by the Brazilian legislation, 12.24% and 17.34% respectively. Alkaline phosphatase enzyme was present in 5.2% of the samples and peroxidase absent in 7.41%, showing inadequate control of the pasteurization process. Foram submetidos a análises microbiológicas e fisico-químicas 1.038 amostras de leite integral pasteurizado pelo processo lento, em propriedades rurais do Estado de Goiás. Os dados obtidos demonstram que 8,19% das amostras apresentaram-se fora do padrão para a contagem de microrganismos aeróbios mesófilos viáveis, 15,13% para a determinação do NMP de coliformes totais e 13,29% para o NMP de fecais. Em relação às análises fisico-químicas, a prova da acidez titulável em graus Dornic e a crioscopia mostraram o maior número de amostras fora do padrão, 12,24% e 17,34%, respectivamente. A enzima fosfatase alcalina esteve presente em 5,2% das amostras e a peroxidase ausente em 7,41%, demonstrando o controle inadequado do tratamento térmico.
