Resumo: With the present essay we evaluate the microbiological quality of the raw milk obtained from milk cans at the source or production. We collected 63 samples of milk, immediately after the early morning milking, in 33 farms from 16 different municipalities around Goiânia -GO. We found out the following microorganisms: aerobic mesophiles, aerobic psychrophiles, aerobic termoduric, total coliforms (MPN), fecal coliforms (MNP) and E. coli (MPN).

O presente trabalho objetivou avaliar a qualidade microbiológica do leite cru colhido em latões ao nível da fonte de produção. Foram colhidas 63 amostras de leite, logo após a ordenha matutina (manual ou mecânica) em propriedades localizadas na bacia leiteira da grande região de Goiânia - GO, compreendendo 16 municípios e 33 fazendas sorteadas ao acaso.
