CARCASS PHYSICAL COMPOSITION AND MEAT QUALITY OF STEERS AND CULL COWS OF DIFFERENT GENETIC GROUPS SUBMITTED TO DIFFERENT FEEDING FREQUENCY

Resumo: The  objective of the study was to evaluate the carcass physical composition and the meat quality of 5/8Charolais (Ch) 3/8Nellore (Ne) and 5/8Ne 3/8Ch steers and cull cows, feedlot finished, submitted to different feeding frequencies, two (7 and 19h), three (7, 13 and 19h) or four (7, 11, 15 and 19h) times a day. Average age of the animals at the end of the experimental period was 23 months for steers and 68 months for cows. The diet, 40:60 roughage:concentrate ratio, contained 2869 kcal of digestible energy/kg of dry matter. Feeding two, three or four times a day did not affect the characteristics studied. Cows carcasses showed higher fat percentage (24.56% vs 20.54%), while steers were superior in muscle percentage (64.93% vs 61.04%). However, the categories did not differ in bone percentage neither in muscle+fat:bone ratio. Genetic group did not affect carcass physical composition neither meat quality. Significant interaction between animal categories x genetic group for meat texture was observed. Cows of the 5/8Ch 3/8Ne genetic group showed coarser meat texture in relation to steers, while for the 5/8Ne 3/8Ch group no difference between categories was observed. The increase in the supply of feeding of two to tree or four times doesn’t influence the carcass physical composition and characteristics of meat. Cows showed carcass with higher fat, while the steers showed higher percentage of muscle. The finished of cows in feedlot resulted in meat quality similar to steers. The genetic group did not influence the carcass physical composition and meat quality.Keywords: Fat, marbling, muscle, tenderness, texture.

The genetic group did not influence the carcass physical composition and meat quality.Keywords: Fat, marbling, muscle, tenderness, texture.Objetivou-se, com este estudo, avaliar a composição física da carcaça e a qualidade da carne de novilhos e vacas de descarte 5/8Charolês (Ch) 3/8Nelore (Ne) e 5/8Ne 3/8Ch, terminados em confinamento, submetidos a distintas frequências de alimentação: duas (7 e 19h), três (7, 13 e 19h) ou quatro (7, 11, 15 e 19h) vezes ao dia. A idade média dos animais ao final do período experimental foi de 24 meses para os novilhos e 69 meses para as vacas de descarte. A dieta continha relação volumoso:concentrado de 40:60, com x de PB e 2.869 kcal de ED)/kg  (na base seca). O fracionamento da alimentação em duas, três ou quatro vezes ao dia não influenciou nenhuma das características avaliadas. As vacas apresentaram maior porcentagem de gordura na carcaça (24,56% contra 20,54%), enquanto os novilhos foram superiores no percentual de músculo na carcaça (64,93% contra 61,04%). Porém as categorias não diferiram quanto à percentagem de osso e à relação músculo+gordura:osso. O grupo genético não influenciou a composição física da carcaça e a qualidade da carne. Foi observada interação significativa entre a categoria e o grupo genético para a textura da carne. Vacas do grupo genético 5/8Ch 3/8Ne apresentaram textura mais grosseira em relação aos novilhos, enquanto que nos animais 5/8Ne 3/8Ch a textura foi semelhante entre as categorias. O aumento no fornecimento da alimentação de duas para três ou quatro vezes não influenciou a composição física da carcaça e as características da carne. Vacas apresentaram carcaça com maior participação de gordura, enquanto os novilhos apresentaram maior porcentagem de músculo. A terminação de vacas em confinamento resultou em carne de qualidade semelhante à de novilhos.
