QUANTITATIVE CARCASS, MORPHOLOGICAL TRAITS AND CORRELATIONS IN DIFFERENT GENETIC GROUPS OF SHEEP

Resumo: | Performance and carcass traits were studied on 48 male sheep from four genetic groups with 27 animals Santa Inês, ten Bergamasca, five from a cross with Texel sire and Santa Inês dams and six from a cross with a Bergamasca sire and Santa Inês dams. Animals were reared at pasture and in semi-confinement Mophological traits and carcass characteristics were studied Data were analyzed using the GLM procedure of SAS ®, as well as CORR , REG and means compared using Tukey (5%). The correlation between weights and carcass output was medium to high. Principal components showed that heavier animals at slaughter had higher carcass cut weights. The animals of the Bergamasca breed presented lower average for the cuttings appraised meats, while the genetic group Texel x Santa Inês presented higher medium value of corporal length, but the appraised variables as cernelha height and thoracic perimeter the breed Texel x Santa Inês didn’t present difference when compared with the other genotypes. Key-words: Cuts, weight, revenue.Estudaram-se as características de carcaça de 48 ovinos machos, oriundos de quatro grupos genéticos di-ferentes, sendo 27 animais da raça Santa Inês, dez da raça Bergamácia, cinco oriundos do cruzamento de Texel com ovelhas Santa Inês e seis animais provenientes do cruzamento de um reprodutor Bergamácia com ovelhas Santa Inês. Mantiveram-se os animais no pasto e em semiconfinamento. Analisaram-se as características morfométricas e quantitativas da carcaça, empregando-se o procedimento GLM, CORR, PRINCOMP e teste de médias (Tukey 5%) do programa estatístico SAS® (Statistical Analysis System). Verificou-se que a correlação dos cortes comerciais com os pesos e os rendimentos de carcaça quente e fria foi de média a alta e positiva. Os componentes principais mostraram que os animais com alto peso ao abate apresentam tendência a obter altos pesos para as partes da carcaça. Os animais da raça Bergamácia apresentaram menor média para os cortes cárneos avaliados, enquanto que o grupo genético Texel x Santa Inês apresentou maior valor médio de comprimento corporal, mas as variáveis avaliadas, como altura de cernelha e perímetro torácico, na raça Texel x Santa Inês, não apresentaram diferença quando comparadas com os demais genótipos.
