Compostos bioativos e capacidade antioxidante in vitro de frações hidrofílicas e lipofílicas de óleo e amêndoa de baru (dipteryx alata vogel)

Resumo: | The Brazilian Cerrado has numerous plant species that have shown promising potential in the food field. There are still in the Brazilian native flora some species that have health beneficial compounds and natural antioxidants important in the prevention of diseases, inhibiting or retarding the oxidation of biomolecules by preventing the initiation or propagation of the oxidation reaction chain. With the purpose of spreading knowledge about native fruits of the Cerrado, this work aimed to evaluate the presence of bioactive compounds, antioxidant capacity and antimicrobial assay of baru oil obtained from Goldfish extraction process using petroleum ether solvent at 95°C. Regarding the bioactive characterization, almond and baru oil, in that order, presented values of 165,99 mg GAE/100g and 8,95 mg GAE/100g for total phenolics, 36.08 and 7.69 mg QE/100g for flavonoids, 1275.19 and 82,13 ìg CAE/100g for phenolic acids, showing great degradation with bioactive compounds during the extraction process using high temperatures. Regarding the carotenoid content, the value obtained for the oil was higher than that obtained for almonds, 55.04 and 195.42 ìg de â-carotene/g, respectively. The composition of phytosterols and tocopherols of baru oil indicate â-sitosterol and á-tocopherol as the predominant compounds in the HPLC analysis, being consistent with other studies and also with other vegetable oils described in the literature. For antioxidant capacity by the methods of ABTS, DPPH, FRAP and Carotene-Linoleate (21.77, 17604, 730.45 ìmol TE/100g and 811.69% protection, respectively) the values differed statistically, and the lipophilic fraction presented lower values (28.07 and 7.38 ìmol TE/100g, respectively) and the same fact occurred for hydrophilic fractions (24.76, 8.85, 15.86 ìmol TE/100g and 84.17% protection, respectively) and lipophilic oil (5.54 and 39.26 ìmol TE/100g, for ABTS and DPPH, respectively). Regarding the antimicrobial assay, there was no antimicrobial activity of the samples on any of the strains of E. coli, Staphylococcus aureus, Salmonella typhimurium e Streptococcus pyogenes analyzed. |

Existem ainda na flora nativa brasileira algumas especies que possuem compostos beneficos a saude e antioxidantes naturais importantes na prevencao de doencas, inibindo ou retardando a oxidacao das biomoleculas por meio da prevencao da iniciacao ou da propagacao da cadeia de reacoes da oxidacao. Com a finalidade de difundir o conhecimento sobre frutos nativos do Cerrado, esse trabalho objetivou avaliar a presenca de compostos bioativos, capacidade antioxidante e atividade antimicrobiana do oleo de baru obtido a partir do processo de extracao por Goldfish, utilizando o solvente eter de petroleo a 95 ‹C. Em relacao a caracterizacao bioativa, a amendoa e o oleo de baru, nessa ordem, apresentaram valores de 165,99 mg EAG/100g e 8,95 mg EAG/100g para fenolicos totais, 36,08 mg EQ/100g e 7,69 mg EQ/100g para flavonoides, 1275,19 ƒÊg EAC/100g e 82,13 ƒÊg EAC/100g para acidos fenolicos, evidenciando grande degradacao destes compostos durante o processo de extracao empregando-se altas temperaturas. Ja em relacao ao conteudo de carotenoides, o valor obtido para o oleo foi superior ao obtido para a amendoa, 55,04 ƒÊg de ƒÀ-caroteno/g e 195,42 ƒÊg de ƒÀ-caroteno/g, respectivamente. A composicao de fitoesterois e tocoferois dos oleos da amendoa de baru indicam o ƒÀ-sitosterol e ƒ¿-tocoferol como os compostos predominantes na analise por CLAE, sendo resultados condizentes com outros estudos e tambem com outros oleos vegetais descritos na literatura. Para capacidade antioxidante da amendoa pelos metodos de ABTS, DPPH, FRAP e Caroteno-linoleato (21,775, 17604, 730,45 ƒÊmol TE/100g e 811,69% protecao, respectivamente) os valores diferiram estatisticamente, sendo que a fracao lipofilica apresentou menores valores (28,07 e 7,38 ƒÊmol TE/100g, respectivamente), ocorrendo o mesmo fato para as fracoes hidrofilicas (24,7, 8,85, 15,86 ƒÊmol ET/100 e 84,17% protecao, respectivamente) e lipofilicas do oleo (5,54 e 39,26 ƒÊmol ET/100, para ABTS e DPPH, respectivamente).
