Resumo: Cheese is a food appreciated around the world, and in Brazil, we have a significant variety, including Minas cheese type Frescal. It is well known that contaminated food can trigger diseases, affecting people in all parts of the planet. Several contaminated food products can cause illnesses, and among them, milk and its derivatives, such as fresh cheese, deserve attention, due to their highly perishable nature. Contamination can occur at several stages, from milking on rural properties to handling during production, transportation and storage. This can result in the presence of pathogens harmful to human health, posing risks to consumers and becoming a public health problem. Some agents involved in diseases transmitted by milk and dairy products are coliforms, Escherichia coli, Staphylococcus aureus, Enterobacteria, Molds and Yeasts, Psychrotrophs and Salmonella spp. During the period of July 2023, microbiological evaluations were carried out on 20 samples of Minas Frescal cheese sold in open-air markets in the city of Cuiabá – Mato Grosso. The results revealed that four samples (20%) were positive for coliforms at 35°C, five (25%) samples were positive for coliforms at 45°C, and seventeen samples (85%) indicated the presence of Escherichia coli. Furthermore, half of the samples presented values above the permitted limits for Staphylococcus sp., and high counts of microorganisms from the Enterobacteriaceae family and psychrotrophs, as well as molds and yeasts, were observed. However, it is important to highlight that all samples were negative for Salmonella spp. These results of the microbiological analysis indicate that the quality of Minas Frescal cheese consumed by the population of the Cuiabá-MT region does not meet standards, presenting unsatisfactory hygienic conditions, representing a risk to public health.

É bem conhecido que alimentos contaminados podem desencadear doenças, afetando pessoas em todas as partes do planeta. Diversos produtos alimentícios contaminados podem causar enfermidades, e entre eles, o leite e seus derivados, como o queijo fresco, merecem destaque, devido à sua natureza altamente perecível. A contaminação pode ocorrer em várias etapas, desde a ordenha nas propriedades rurais até a manipulação durante a produção, transporte e armazenamento. Isso pode resultar na presença de patógenos prejudiciais à saúde humana, representando riscos para os consumidores e se tornando um problema de saúde pública. Alguns agentes envolvidos com doenças transpitidas por leite e derivados são coliformes, Escherichia coli, Staphylococcus aureus, Enterobactérias, Bolores e Leveduras, Psicrotróficos e Salmonella spp. Durante o período de julho de 2023 foram feitas avaliações microbiológicas em 20 amostras de queijo Minas Frescal comercializadas em feiras livres na cidade de Cuiabá – Mato Grosso. Os resultados revelaram que quatro amostras (20%) estavam positivas para coliformes a 35°C, cinco (25%) amostras estavam positivas para coliformes a 45°C e dezessete amostras (85%) indicavam a presença de Escherichia coli. Além disso, metade das amostras apresentou valores acima dos limites permitidos para Staphylococcus sp., e foram observadas contagens elevadas de micro-organismos da família Enterobacteriaceae e psicrotróficos, assim como Bolores e Leveduras.
