PERCEPÇÃO DE CONSUMIDORES FRENTE À EXPOSIÇÃO DE INFORMATIVO NUTRICIONAL

Resumo: Over the years the demand for food outside the home has favored the increase in the number of establishments in the food sector with emphasis on the growth in the number of restaurants, convenience stores, snack bars and bakeries. According to current legislation, nutrition labeling is any statement intended to inform the consumer of the nutritional properties of food, comprising the table of nutritional information and nutrition labeling front is the simplified standardized declaration of the high content of specific nutrients on the main panel of the food label. The labeling laws apply to packaged foods in the absence of consumers, but in self-service establishments it is voluntary. It is worth noting that many people need or prefer, due to their routine, to eat out of home, and in some cases need or seek the restriction of some nutrients or food components. In this sense we highlight overweight individuals, hypertensive people, diabetics, celiac patients, people with food allergies or lactose intolerance, for example. To evaluate which information is more effective for food service consumers in relation to the display of nutritional information on self-service foods. Due to the pandemic period, this study was conducted by applying an online form in usual sandwich consumers in the state of Rio Grande do Sul, with data collection in April and May 2020. For evaluation, images of three sandwiches (ham and cheese; chicken sandwich; hamburger) were used, and four models of nutritional information were displayed on these sandwiches: the traditional, the simplified, the alert, and the traffic light. Through Google Forms the participants' profile was determined and the consumers' opinion about the presence of informative food information in food services was investigated, as well as the need for current legislation on this topic and whether the information currently present is sufficient. We verified the consumers' perceptions through the preference and acceptability tests, as well as how much the presence of the different informatives influenced their food choices and how much they are understood. With the results of this research, it can be seen that the more information is presented to the consumer the better their choices were (p<0.001). Thus, the traffic light and warning model influenced in reducing the choice of the ham and cheese and hamburger type sandwich. Analyzing the nutritional quality criteria the traffic light (72.7%) and alert (71.8%) informative models were the most chosen compared to the traditional (32.3%) and simplified (50%) models. All proposed models had a good acceptability and there was an association between the level of understanding of consumers in relation to the type of nutritional information (p<0.001). The traffic light model was preferred by participating consumers and was the best understood compared to the alert and simplified models. In summary, it can be concluded that the evaluated consumers would like to have more information on foods displayed in food services, as well as reported that the information currently available is insufficient. The preferred and best understood model was the traffic light, however this scenario may change because the warning model was approved to be displayed on processed foods. An extremely important aspect was the positive influence that the information generated in the sandwich choices. Thus, it is believed that this measure should be regulated and implemented nationwide with a focus on promoting the health of the Brazilian population.

Segundo a legislação vigente, a rotulagem nutricional é toda declaração destinada a informar ao consumidor as propriedades nutricionais do alimento, compreendendo a tabela de informação nutricional e rotulagem nutricional frontal é a declaração padronizada simplificada do alto conteúdo de nutrientes específicos no painel principal do rótulo do alimento. As legislações de rotulagem se aplicam aos alimentos embalados na ausência dos consumidores, porém em estabelecimentos self-service é de caráter voluntário. Vale salientar que muitas pessoas precisam ou preferem, em função da sua rotina, se alimentar fora de casa, e em alguns casos precisam ou buscam a restrição de alguns nutrientes ou componentes alimentares. Neste sentido destaca-se indivíduos com sobrepeso, hipertensos, diabéticos, doentes celíacos, pessoas com alergias alimentares ou com intolerância a lactose, por exemplo. Avaliar qual informativo tem melhor desempenho para os consumidores de serviços de alimentação frente à exposição de informativo nutricional nos alimentos de autosserviço. Em virtude do período pandêmico, este estudo foi realizado por meio da aplicação de um formulário on line em consumidores usuais de sanduiches do estado do Rio Grande do Sul, com coleta de dados nos meses abril e maio de 2020. Utilizou-se para avaliação as imagens de três sanduíches (presunto e queijo; sanduíche de frango; hambúrguer) e nestes foram expostos quatro modelos de informativo nutricionais, sendo eles o tradicional, o simplificado, o alerta e o semáforo. Por meio do Google Forms determinou-se o perfil dos participantes e investigou-se a opinião dos consumidores quando a presença de informativos dos alimentos em serviços de alimentação, quanto a necessidade de legislação vigente nesta temática e se as informações presentes atualmente são suficientes. Verificou-se as percepções dos consumidores por meio dos testes de preferência e aceitabilidade, assim como o quanto a presença dos diferentes informativos influenciou nas suas escolhas alimentares e o quanto eles são compreendidos. Com os resultados desta pesquisa, pode-se constatar que quanto mais informações são apresentadas ao consumidor melhores foram as suas escolhas (p<0,001). Assim, o modelo do semáforo e do alerta influenciou na redução da escolha do sanduiche de presunto e queijo e do tipo hambúrguer. Analisando o critério qualidade nutricional os modelos informativos semáforo (72,7%) e alerta (71,8%) foram os mais escolhidos na comparação com os modelos tradicional (32,3%) e simplificado (50%). Todos modelos propostos tiveram uma boa aceitabilidade e verificou-se associação entre o nível de compreensão dos consumidores em relação ao tipo de informativo nutricional (p<0,001). O modelo semáforo foi o preferido pelos consumidores participantes e o melhor compreendido na comparação com os modelos alerta e simplificado. Em suma, pode-se concluir que os consumidores avaliados gostariam de ter mais informações nos alimentos expostos em serviços de alimentação, assim como relataram que as informações disponibilizadas atualmente são insuficientes. O modelo preferido e melhor compreendido foi o semáforo, entretanto este cenário pode mudar pois o modelo de alerta foi aprovado para ser exposto nos alimentos industrializados. Um aspecto de extrema importância foi a influência positiva que as informações geraram nas escolhas dos sanduiches.
