Resumo: In today's context, transgender people suffer discrimination and marginalization in society and the job market, so this research was developed within the fields of Cultural, Historical and Gender Studies, from a post-structuralist perspective. The focus of the analysis was on representations and discourses about gender identities, specifically transgender people and their working relationship with gastronomy. As a guiding principle for the research, it was proposed to analyze a section of the job market in the area of gastronomy, more focused on kitchen workers. The research is based on the assumption that the kitchen is a space permeated by relationships of inclusion and protection, but also of power and social norms that limit the participation and visibility of transgender people in this environment. Furthermore, this space is positioned as a place of protection, given that diners don't bother to know who prepared the food, giving a certain "invisibility" to the professionals. The main objective of this research was to distinguish the social barriers to the inclusion of transgender people in the gastronomic job market. The method used was Foucault's discourse analysis, with open-ended semi-structured interviews with transgender people who work as professionals in kitchens. The research was structured around the dissociation of male and female transgender people in order to better understand the genders. By entering the territories of the kitchen, we look at the representation not only of food, but of the structures that permeate gastronomic organizations, as well as the meanings and memories that are interwoven both in the making of dishes and in the tasting of them. In this way, the dissertation has contributed to an understanding of the power dynamics and discourses that influence the inclusion of transgender people in the kitchen, and proposes reflections for the promotion of a more inclusive and egalitarian society by seeking work alternatives for transgender people.

A partir disso, teve-se como foco de análise representações e discursos sobre identidades de gênero, especificamente os transgêneres e sua relação de trabalho com a gastronomia. Como norteador de pesquisa, propôs-se a analisar um recorte do mercado de trabalho, na área da gastronomia, mais direcionado a trabalhadores da cozinha. A pesquisa parte do pressuposto de que a cozinha é um espaço permeado por relações de inclusão e proteção, mas também de poder e normas sociais que limitam a participação e visibilidade de pessoas transgêneres nesse ambiente. Ainda, este espaço se posiciona como uma local de proteção, dado que os comensais não se preocupam em saber quem preparou os alimentos, dando uma certa “invisibilidade” aos profissionais. Desta forma, a pesquisa teve como objetivo principal a distinção das barreiras sociais à inserção de pessoas transgêneres no mercado de trabalho gastronômico. O método utilizado foi de análise de discurso de Foucault, tendo sido formuladas entrevistas semiestruturadas abertas com pessoas transgêneres que atuam como profissionais em cozinhas. A pesquisa se estruturou em dissociação de transgêneres masculinos e femininos a fim de melhor compreensão dos gêneros. Ao entrar nos territórios da cozinha, olha-se para a representação não apenas alimentar, mas das estruturas que permeiam as organizações gastronômicas, bem como os sentidos e memórias que se entrelaçam tanto na confecção dos pratos quanto do degustar dos mesmos.
