Resumo: With the increased consumption of industrialized food, the ingestion of food additives used in the technological processing of this kind of food reveals itself as a threat to the human health, mainly of the child population. The dyes are the additives applied only with the meaning of giving or restoring the color of the foodstuffs, without offering any nutritional value to it. Studies have been demonstrating the occurrences of adverse reactions at short or long term associated with the ingestion of food that have in their composition the artificial dyes. Those reactions range since allergies and behavior alterations to carcinogenicity and mutagenicity. The goal of this study was determinate the concentration of industrialized dyes in matinal cereal, contributing to evaluate the exposure of children between 2 to 8 years old, and also formulate the methodology of determination of artificial dyes on matinal cereal. It was elaborated a questionnaire about the frequency and quantity consumed of matinal cereal by the infants, being the same answered by their responsibles. The ingestion was classified in score and evaluated by the Kruskal-Wallis test, applying as a tool the Microsoft Office Excel 2007 software. After this analysis, it was verified that the children were split in two big groups, being the first with ages between 2 and 5 years old, with consumption of score 1, and the second group with ages between 6 and 8 years old, with consumption of score 2. Concerning the flavor of the consumed cereal, 65% ingest the traditional cereal, 25% the chocolate flavor and 10% the fruits flavor, with only the last two flavors bringing in their composition artificial dyes. The validation was made to the dyes allowed by the legislation of use in matinal cereal, and they are: sunset yellow, allura red AC and brilliant blue. All the process of validation in this research was made under the recommended by Thompson et al. (2002), using the advices present in the INMETRO DOO-CGCRE-08 (2011) document and in IUPAC harmonized guidelines, measuring the following method performance: Limit of detection (LD), limit of quantification (LQ), linearity, selectivity, repeatability, intermediate precision and recovery. The linear range found to Sunset Yellow was 15 to 45 mg/L, to Allura Red AC and Brilliant Blue was 5 to 35 mg/L. The LD and LQ were, respectively 3 mg/L and 6 mg/L for Sunset Yellow and 2 mg/L and 4 mg/L for allura red AC and brilliant blue. The recovery percentage was 82 to 97% for sunset yellow, 82 to 87% for allura red AC and 81 to 86% for brilliant blue. The calculated values for repeatability as standard deviation were 0.455 mg/L for sunset yellow, 0.375 mg/L for allura red AC and 0.542 mg/L for Brilliant Blue. Finally, the measures calculated from Horwitz ratio (RSDexperimental/RSDHorwitz) to the determination of intermediate precision found were 0.393 for Sunset Yellow, 0.090 for allura red AC and 0.040 for brilliant blue. The method showed itself precise, exact, linear in a wide range of concentration and your determination is not influenced by the alimentary matrix for determination by HPLC. Besides, the methodology turns out interesting since there are no official methods for the determination of industrialized dyes in matinal cereal. In a sample, among the analyzed cereals, it was identified tartrazine dye, which is not allowed to be used o this kind of product. In the others, all were according to the legislation, even respecting the IDA established for each dye. It is worth noting that it is only a single kind of artificially colored food consumed by youngsters, however in its daily diet, a child ingest many foods which contain these substances, such as powder juice, many candies, cookies, gelatin, comfit, sodas, what points the need of a further study about the daily consumption of artificial dyes by children. The fact that one sample contains tartrazine, forbidden dye for this kind of food, alert about the necessity of an effective sanitary supervision about the artificially colored products.

Os corantes s?o os aditivos utilizados apenas com a finalidade de conferir ou restaurar a cor do alimento, sem oferecer nenhum valor nutritivo ao mesmo. Estudos v?m demonstrando a ocorr?ncia de rea??es adversas a curto e longo prazo associadas ao consumo de alimentos que possuem em sua composi??o os corantes artificiais. Estas rea??es variam desde alergias e altera??es comportamentais ? carcinogenicidade e mutagenicidade. O objetivo do presente trabalho foi determinar a concentra??o de corantes artificiais em cereais matinais, contribuindo para avaliar a exposi??o de crian?as entre 2 a 8 anos, al?m de elaborar e validar a metodologia de determina??o de corantes artificiais nos cereais matinais. Foi elaborado um question?rio sobre a frequ?ncia e quantidade consumida de cereais matinais pelas crian?as, sendo o mesmo respondido pelos respons?veis. O consumo foi classificado em escore e avaliado pelo teste de Kruskal-Wallis utilizando como ferramenta o programa Microsoft Office Excel 2007. Ap?s esta an?lise verificou-se que as crian?as estavam divididas em dois grandes grupos, sendo o primeiro de idade entre 2 e 5 anos, com consumo de escore 1 e o segundo grupo com idade entre 6 e 8 anos, com consumo de escore 2. Em rela??o ao sabor do cereal consumido 65% ingerem o cereal tradicional, 25% o sabor chocolate e 10% o sabor de frutas, sendo que apenas os dois ?ltimos possuem em sua composi??o os corantes artificiais. A valida??o foi realizada para os corantes permitidos pela legisla??o para uso em cereais matinais, sendo: amarelo crep?sculo, vermelho 40 e azul brilhante. Todo o processo de valida??o desta pesquisa para determina??o por cromatografia l?quida de alta efici?ncia (CLAE) foi realizado de acordo com o preconizado por Thompson et al. (2002), utilizando as recomenda??es contidas no documento do INMETRO DOQ-CGCRE-08 (2011) e no Guia harmonizado IUPAC, avaliando as seguintes figuras de m?rito: limite de detec??o (LD), limite de quantifica??o (LQ), linearidade, seletividade, repetitividade, precis?o intermedi?ria e exatid?o (recupera??o). A faixa linear encontrada para o amarelo crep?sculo foi 15 a 45 mg/L, para o vermelho 40 e azul brilhante foi 5 a 35 mg/L. O LD e o LQ foi, respectivamente de 3 mg/L e 6 mg/L para o amarelo crep?sculo e de 2mg/L e 4 mg/L para o vermelho 40 e azul brilhante. O percentual de recupera??o foi de 82 a 97% para o amarelo crep?sculo, 82 a 87% para o vermelho 40 e de 81 a 86% para o azul brilhante. Os valores calculados para repetitividade, como desvio padr?o, foram de: 0,455 mg/L para o amarelo crep?sculo, de 0,375 mg/L para o vermelho 40 e de 0,542 mg/L para o azul brilhante. Por fim, os valores calculados da raz?o de Horwitz (RSDexperimental/RSDHorwitz) para a determina??o da precis?o intermedi?ria foram de 0,393 para o amarelo crep?sculo, de 0,090 para o vermelho 40 e de 0,040 para o azul brilhante. O m?todo mostrou-se preciso, exato, linear em ampla faixa de concentra??o e sua determina??o n?o ? influenciada pela matriz alimentar. Al?m disso, a metodologia mostra-se interessante uma vez que n?o existem m?todos oficiais para a determina??o de corantes artificiais em cereais matinais. Em uma amostra, dentre os cereais analisados, identificou-se o corante tartrazina, o qual n?o ? permitido o uso neste tipo de produto. Nos demais, todos estavam de acordo com a legisla??o, inclusive em rela??o ? IDA (ingest?o di?ria aceit?vel) estabelecida para cada corante. Vale ressaltar que esse ? apenas um tipo de alimento colorido artificialmente consumido pelas crian?as, por?m em sua dieta di?ria a crian?a ingere v?rios alimentos que cont?m essa subst?ncia, como por exemplo, sucos em p?, doces diversos, biscoitos, gelatinas, confeitos, refrigerantes, o que sinaliza a necessidade de um estudo mais aprofundado sobre o consumo di?rio de corantes artificiais por crian?as. description With the increased consumption of industrialized food, the ingestion of food additives used in the technological processing of this kind of food reveals itself as a threat to the human health, mainly of the child population. The dyes are the additives applied only with the meaning of giving or restoring the color of the foodstuffs, without offering any nutritional value to it. Studies have been demonstrating the occurrences of adverse reactions at short or long term associated with the ingestion of food that have in their composition the artificial dyes. Those reactions range since allergies and behavior alterations to carcinogenicity and mutagenicity. The goal of this study was determinate the concentration of industrialized dyes in matinal cereal, contributing to evaluate the exposure of children between 2 to 8 years old, and also formulate the methodology of determination of artificial dyes on matinal cereal. It was elaborated a questionnaire about the frequency and quantity consumed of matinal cereal by the infants, being the same answered by their responsibles. The ingestion was classified in score and evaluated by the Kruskal-Wallis test, applying as a tool the Microsoft Office Excel 2007 software. After this analysis, it was verified that the children were split in two big groups, being the first with ages between 2 and 5 years old, with consumption of score 1, and the second group with ages between 6 and 8 years old, with consumption of score 2. Concerning the flavor of the consumed cereal, 65% ingest the traditional cereal, 25% the chocolate flavor and 10% the fruits flavor, with only the last two flavors bringing in their composition artificial dyes. The validation was made to the dyes allowed by the legislation of use in matinal cereal, and they are: sunset yellow, allura red AC and brilliant blue. All the process of validation in this research was made under the recommended by Thompson et al. (2002), using the advices present in the INMETRO DOO-CGCRE-08 (2011) document and in IUPAC harmonized guidelines, measuring the following method performance: Limit of detection (LD), limit of quantification (LQ), linearity, selectivity, repeatability, intermediate precision and recovery. The linear range found to Sunset Yellow was 15 to 45 mg/L, to Allura Red AC and Brilliant Blue was 5 to 35 mg/L. The LD and LQ were, respectively 3 mg/L and 6 mg/L for Sunset Yellow and 2 mg/L and 4 mg/L for allura red AC and brilliant blue. The recovery percentage was 82 to 97% for sunset yellow, 82 to 87% for allura red AC and 81 to 86% for brilliant blue. The calculated values for repeatability as standard deviation were 0.455 mg/L for sunset yellow, 0.375 mg/L for allura red AC and 0.542 mg/L for Brilliant Blue. Finally, the measures calculated from Horwitz ratio (RSDexperimental/RSDHorwitz) to the determination of intermediate precision found were 0.393 for Sunset Yellow, 0.090 for allura red AC and 0.040 for brilliant blue. The method showed itself precise, exact, linear in a wide range of concentration and your determination is not influenced by the alimentary matrix for determination by HPLC. Besides, the methodology turns out interesting since there are no official methods for the determination of industrialized dyes in matinal cereal. In a sample, among the analyzed cereals, it was identified tartrazine dye, which is not allowed to be used o this kind of product. In the others, all were according to the legislation, even respecting the IDA established for each dye. It is worth noting that it is only a single kind of artificially colored food consumed by youngsters, however in its daily diet, a child ingest many foods which contain these substances, such as powder juice, many candies, cookies, gelatin, comfit, sodas, what points the need of a further study about the daily consumption of artificial dyes by children. The fact that one sample contains tartrazine, forbidden dye for this kind of food, alert about the necessity of an effective sanitary supervision about the artificially colored products.
