Resumo: In an increasingly globalized and competitive world, the pursuit of quality has been the main competitive factor of agroindustries, so the quality management system is very important, as it is responsible for ensuring that products are being manufactured and distributed with quality and free of contamination. In view of this, this course completion work aims to make a diagnosis of quality management in a dairy industry in the upper Sergipe Sergipano, and thus find out how quality management is accomplished, from obtaining the raw material to the final product. In order to make this possible, four descriptive questionnaires divided into questionnaire A (the company's operating profile), B (management of quality management by dairy), C (quality management of the raw material) and D (which was the quality of the dairy), these questionnaires were applied locally in the dairy containing open and closed questions. Through the data obtained from the company, it is LTDA type, a small one, which works with 66 employees and has been in the market for 15 years, currently processes 100 thousand liters of milk a day, for the production of four products, , mozzarella cheese, butter and butter curd, with the SIF label that allows its products to be marketed to other states. To assist in the quality management of the industry, it has implemented the PACs, and some quality methodology such as HACCP, PPHO, GMP, verification sheets, complying with current legislation in the country. The quality control of the raw material is carried out by dairy from its suppliers, providing training and training on good milking practices, performing physical-chemical and microbiological analyzes of milk in the laboratory and training its employees. Dairy is concerned with the quality of its products and therefore focuses its management on controlling the production processes from the raw material, and in all stages of production, storage and distribution, so the agroindustry is in the era of quality assurance, and to stay in the market, need to change the focus of its management.

Tendo em vista isso, este trabalho de conclusão curso tem por objetivo, fazer um diagnóstico da gestão da qualidade em uma agroindústria de laticínio no alto Sertão Sergipano, e assim descobrir como é realizada gestão da qualidade, desde a obtenção da matéria-prima ate o produto final. Para que isso fosse possível, foram aplicados ao laticínio quatro questionários descritivos divididos em: questionário A (o perfil de funcionamento da empresa), B (o gerenciamento da gestão da qualidade realizada pelo laticínio), C (gerenciamento da qualidade da matéria prima) e D (qual era da qualidade o laticínio se encontra), esses questionários foram aplicados em loco no laticínio contendo perguntas abertas e fechadas. Através, dos dados obtidos a empresa, é do tipo LTDA, de pequeno porte, que funciona com 66 funcionários e está há 15 anos no mercado, processa atualmente 100 mil litros de leite dia, para fabricação de quatro produtos, sendo eles o queijo coalho, queijo mussarela, manteiga e requeijão manteiga, possuindo o selo SIF que permite que seus produtos, sejam comercializados para outros estados. Para auxiliar na gestão da qualidade a indústria, tem implementado os PAC, e algumas metodologia da qualidade como APPCC, PPHO, BPF, folhas de verificação, atendendo a legislação vigente do país. O controle da qualidade da matéria prima é realizado pelo laticínio desde seus fornecedores, fornecendo a eles treinamentos e capacitação sobre, boas praticas de ordenha, realizando analises físico-químicas e microbiológicas do leite no laboratório e treinando seus colaboradores.
