Resumo: | The present work has as its basic objective, to highlight and analyze the immaterial cultural heritage of the city Frei Paulo-SE, addressing the knowledge, practices and flavors that constitute a rich set of heritage goods, which are part of the culture of the Frei paulistano people. To this end, we focus mainly on oral sources, listening to the direct agents responsible for the production of certain assets, without neglecting the written and / or audiovisual sources that contributed to the performance of the work. Frei Paulo has a great wealth of heritage when it comes to immateriality, from Dadá's famous cassava cake, to Dona Bebé's delicious milk candies, Natanael's incredible ice cream, to Dona Dulce's peculiar embroidery, Richelieu. In this sense, we are interested in the know-how of each patrimonial asset, and the subjects who produce it, whether in cooking with the specific of way to prepare the delicacy, or in embroidery, which has a singular characteristic, which in Sergipe, only exists in Frei Paulo. |

Para tanto, se atém principalmente as fontes orais, ouvindo os agentes diretos responsáveis pela produção dos determinados patrimônios, sem deixar de lado, as fontes escritas e/ou audiovisuais que contribuíram para dar rendimento ao trabalho. Frei Paulo abriga uma grande riqueza patrimonial quando se trata de imaterialidade, desde o famoso bolo de macaxeira de Dadá, passando pelas deliciosas balas de leite de dona Bebé, o incrível sorvete de Natanael, até o peculiar bordado de dona Dulce, o Richelieu.
