Resumo: Currently, Sergipe occupies the 5th position in the ranking of states that live with hunger, a fact that worsened during the covid-19 pandemic, added to the discontinuity of government programs that occurred in recent years, among other factors. To alleviate this situation, it is necessary to use techniques and actions that directly combat this problem. Food biofortification is seen as an alternative to face food insecurity for people who survive in this condition. The present work aimed to enable actions aimed at the implementation of the Biofortification Program in the eight territories of Sergipe, with the aim of contributing to the promotion of Food and Nutritional Security for citizens. The Secretaria de Estado da Assistência Social e Cidadania was fundamental for the development of the work, since, through the institution, the Biofortification Program was presented, allowing the construction of this project for Sergipe. Methodologically, a bibliographic study on the subject was used, as was the exchange of information with Embrapa professionals. Aiming at establishing the project, future actions were planned in the initial stage as a recommendation for achieving the objectives. Demonstration units will be created in the territories, so that the biofortified seeds and seedlings are implanted in areas of institutions and rural producers. Both will be selected through the application of a semi-structured questionnaire, as well as becoming responsible for the dissemination, creation and strengthening of the seed and seedling bank. In this context, the production of food with biofortified seeds and seedlings is a possibility to help face the lack of micronutrients, with mineral supplementation, acquired through the development of nutritionally improved products.

Para amenizar esse quadro, é necessário o emprego de técnicas e ações que combatam diretamente essa problemática. A biofortificação de alimentos é apontada como uma alternativa para enfrentar o quadro de insegurança alimentar de pessoas que sobrevivem nessa condição. O presente trabalho teve como objetivo viabilizar ações voltadas a implantação do Programa de Biofortificação nos oito territórios sergipanos, com o intuito de contribuir para a promoção da Segurança Alimentar e Nutricional dos cidadãos. A Secretaria de Estado da Assistência Social e Cidadania foi fundamental para o desenvolvimento do trabalho, uma vez que, através da instituição foi apresentado o Programa de Biofortificação, permitindo a construção desse projeto para Sergipe. Metodologicamente, foi utilizado estudo bibliográfico acerca do tema, tal como realizada a troca de informações com profissionais da Embrapa. Visando o estabelecimento do projeto, ações futuras foram planejadas na etapa inicial como recomendação para o alcance dos objetivos. Unidades demonstrativas serão criadas nos territórios, para que as sementes e mudas biofortificadas sejam implantadas em áreas de instituições e de produtores rurais. Ambos, serão selecionados através da aplicação de questionário semiestruturado, bem como se tornarão responsáveis pela disseminação, criação e fortalecimento do banco de sementes e mudas.
