The logistic process of the fresh produce sector is extremely important not only because it reduces the waste of these perishable products but also because it needs to meet the consumer’s expectations that keeps growing each day. With that said, the main goal of this study is to demonstrate how important it is to understand the logistic process of fresh produce stores in a large retailer in the city of Aracaju/SE. For the purpose of this study, qualitative research was used through a semi-structured interview script used with the managers and employees of the perishable sector of 03 stores in the retail chain, and the manager and employees of 01 outsourced distribution center, since the chain does not have its own vegetable and fruit distribution center, as well as a questionnaire applied to 60 chain customers, 20 customers in each unit visited. This was done through the analysis of the various actors/parties/people involved, due to the relevance of these products to the retail market, as they are part of the strategy of the internal traffic of customers and in the increase in the frequency of stores visits. The main results obtained through the analysis of these data are that the logistical process of fresh produce from the studied retail chain is satisfactory and within the expected and required conformities in the sector. There were difficulties within the normal range given that distribution is done by outsourced distribution centers and that they are not always perfectly synchronized in their routing process for example.
