Resumo: | This study aims to compare two methods used in the drying process with dryers, being held in a solar dryer by natural convection (SSNC) and the other in a solar dryer bioreactor (BSS) with forced air circulation. The studies were performed with protein supplement obtained from cashew apple enriched with 2% yeast of the species Saccharomyces cerevisiae. The samples were submitted to solar drying in both driers for 290 minutes. Drying was finished by 50 min in stove at 80ºC in order to stop the cell growth and decrease the water content present in the partially dried protein supplement. For the procedure performed in the BSS the drying process achieved a better performance, since the drying of the samples finished with 65.05% on a wet basis while the natural convection solar dryer samples finished with 74.26% on the same basis for the same drying time in both dryers. |

O material utilizado foi suplemento proteico obtido de bagaço de caju enriquecido com 2% de levedura da espécie Saccharomyces cerevisiae. As amostras foram submetidas à secagem solar em ambos secadores durante 240min. A secagem foi finalizada mediante 50 minutos em estufa a 80 ºC com a finalidade de interromper o crescimento celular e diminuir o teor de água presente no suplemento proteico seco parcialmente.
