Características morfométricas e avaliação dos não componentes de carcaça de caprinos mestiços Anglonubiana x SPRD criados na caatinga em sistema semi-intensivo

Resumo: Goat farming in Brazil has been characterized as an activity of great importance in the socioeconomic market in the Northeast region, because it generates jobs and income. Currently, the goat is presented as an alternative to product diversification and increased profitability of farms. In this context, the production of goat meat has been driven by their appreciation and high demand from consumers, besides the use of non-carcass components, in making dishes like "buchada" and "sarapatel". This study aimed to evaluate the morphometric characteristics in vivo and carcass and non carcass components of crossbred goats raised on pasture Anglonubiana savanna, receiving different levels of supplementation. Food supplementation was composed of palm girl, corn meal, wheat bran, soybean meal and cottonseed. The experimental design used was randomized complete block design (DBC) with four levels of supplementation (0.0, 0.5, 1.0 and 1.5% of body weight) and seven goats (repetitions), with the blocks formed to monitor the effect of initial weight. Analysis of variance was performed and means were compared by Tukey test (5%). The increased level of supplementation positively influenced (P<0.05), slaughter live weight and body length ranging from 18.53 to 22.50 kg and 58.28 to 63.71 cm for morphometric measures in housing, only variables hip width, hip perimeter, compactness index of the leg and suffered influences carcass (P<0.05) treatments, with values ranging from 13.95 to 18.70 cm, 43.71 to 48.50 cm, 0.40 to 0.51 and from 0.13 to 0.16 (kg/cm) respectively. The absolute weights of lung, heart, liver, spleen, pancreas and small intestine were influenced (P<0.05) among treatments and ranged from 0.136 to 0.202 kg, 0.110 to 0.150 kg, 0.36 to 0.48 kg, 0.033 and 0.053kg, 0.019 to 0.029kg and 0.41 to 0.52 kg. Byproducts in the mesentery and omento only had influence (P<0.05) treatments and ranged from 0.12 to 0.21 kg and 0.09 to 0.35kg. The weight of "buchada" increased significantly (P<0.05) with increasing level of supplementation and ranged from 2.63 to 3.52 kg, respectively. It is possible that supplemental feeding goats with higher live weight at slaughter, further morphometric measurements in vivo and housing, greater absolute weight for organs, viscera, by products and constituents of the "buchada .

Atualmente a caprinocultura se apresenta como uma alternativa para a diversificação da produção e aumento da rentabilidade das propriedades rurais. Neste contexto, a produção de carne caprina tem sido impulsionada pela sua valorização e elevada demanda por parte dos consumidores, além do aproveitamento dos não componentes de carcaça, na confecção de pratos típicos como a buchada e o sarapatel . O presente trabalho objetivou avaliar as características morfométricas in vivo e da carcaça e os não componentes de carcaça de caprinos mestiços da raça Anglonubiana criados em pastagem de caatinga, recebendo diferentes níveis de suplementação. A suplementação alimentar foi composta por palma miúda, fubá de milho, farelo de trigo, farelo de soja e caroço de algodão. O delineamento experimental, utilizado foi em blocos inteiramente casualizados (DBC), com quatro níveis de suplementação (0,0; 0,5; 1,0 e 1,5% do peso vivo) e sete caprinos (repetições), sendo os blocos formados para controlar o efeito do peso inicial. Foi feita análise de variância e as médias foram comparadas pelo teste de Tukey (5%). O aumento do nível da suplementação influenciou positivamente (P<0,05) o peso vivo ao abate e o comprimento corporal que variaram de 18,53 a 22,50kg e de 58,28 a 63,71cm, para as medidas morfométricas na carcaça, apenas as variáveis largura da garupa, perímetro da garupa, índice de compacidade da perna e da carcaça sofreram influencia (P<0,05) dos tratamentos, apresentando valores que variaram de 13,95 a 18,70 cm; 43,71 a 48,50 cm; 0,40 a 0,51 e 0,13 a 0,16 (kg/cm) respectivamente. Os pesos absolutos do pulmão, coração, fígado, baço, pâncreas e intestino delgado sofreram influencia (P<0,05) dos tratamentos e variaram de 0,136 a 0,202kg; 0,110 a 0,150kg; 0,36 a 0,48kg; 0,033 a 0,053kg; 0,019 a 0,029kg e de 0,41 a 0,52kg. Nos subprodutos apenas o mesentério e omento apresentaram influencia (P<0,05) dos tratamentos e variaram 0,12 a 0,21kg e de 0,09 a 0,35kg. O peso de buchada aumentou significativamente (P<0,05) em função do aumento do nível de suplementação e variou de 2,63 a 3,52kg, respectivamente.
