Resumo: This article aims to present the organization of the work in restaurants kitchens and explore some forms that moral and sexual harassment takes in this work environment. To achieve this, it starts with a description of the working processes and the hierarchy that organizes them, centered on thechef’s figure, and presents the elements that make up culinary work ethos. From this contextualization, using elements narrated in interviews by kitchen professionals, we propose a reflection on moral and sexual harassment in this space.

Para logra-lo, parte-se de una descripción de los procesos de trabajo y la jerarquía que los organiza, centrada en la figura del chef, y presenta los elementos que configuran el ethos del trabajo culinario. A partir de esta contextualización, usando elementos narrados en entrevistas por profesionales de la cocina, se propone una reflexión sobre el acoso moral y sexual en este espacio.No presente artigo, tenho como objetivo apresentar a organização do trabalho em cozinhas de restaurantes e explorar algumas formas que o assédio moral e sexual assume neste ambiente de trabalho. Para tal, parto de uma descrição dos processos de trabalho e da hierarquia que o organiza, centrada na figura do/a chef, e apresento os elementos que compõem o ethos do trabalho culinário.
