Resumo: Promoting territorial development in a sustainable, collaborative way, preserving local identity and generating a value chain is the challenge that many communities face daily. Initiatives to promote these fronts are emerging around the world, as is the case of Slow Food, a movement that defends the production of food with local resources, thus valuing the origin of products and integrating agents in the region. Strengthening this type of action can also be a good alternative for the development of gastronomic tourism. For this, it is essential that there is the integration of local actors with the external public in prospecting the territory. This being the context, this article seeks to map the contributions of strategic design and its methodological processes in order to position the designer as an articulator of the territory, synthesizing multiple views, creating scenarios, providing directions and proposing design alternatives. As a synthesis of this mapping, a visual representation called the Conceptual Model was constructed, which made it possible, in a clearer and more dynamic way, to read the existing connections between the Slow Food movement and gastronomic tourism articulated by strategic design

Iniciativas para impulsionar essas frentes vem surgindo ao redor do mundo, é o caso do Slow Food, movimento que se configura pela defesa da produção de alimentos com recursos locais, valorizando, assim, a origem dos produtos e integrando agentes da região. Fortalecer esse tipo de ação pode ser também uma boa alternativa para o desenvolvimento do turismo gastronômico. Para isso, é fundamental que haja a integração dos atores locais com o público externo na prospecção do território.
