Resumo: This thesis intend to investigate the knowledges and practices involved in the feeding process of familiar farmers in the city of Jaboticaba / RS, from alimentation phenomena described in the history of food and the narrative of local residents. Accordingly, this paper deal with feeding relations that the subjects have with their environment and with each other, considering that the practices are made with agroecological appropriations of the space where these groups live. Thus, there was a face-to-face interaction with the farmers. Interviews where made, as well as observations of feeding practices and analysis of narratives about the memory of feeding activities undertaken by the group of farmers. Therefore, from the history of alimentation, it was investigated the relationship of different human groups with food, presenting an analytical description of the movements made by subjects in the food system, as well as an analysis of the relationship between subject-areafood. Thus, it was found that the preference to consume certain foods - for the familiar group of farmers and particularly for the individuals - is held as a serie of experiences situated along the history of the social group as well with representations and meanings assigned to food. Thereby, from the memory of "the old time" and perceptions about local knowledge and feeding practices, it's evident the existence of: a) classifications and differentiations used in activities related to nutrition; b) distinctions about the meaning that the food has for different groups, different social occasions and purposes in the use of the food; c) changes in the act of eating - with a visible reduction of the food grown for domestic consumption of the familiar group, that happens because of the inclusion of products bought in markets. Such phenomena have revealed a erosion of cultural feeding that influenced in the transformation of practices and nourishment knowledge of family farmers. Therefore, the meaning and "remeaning" processes of the nourishment's practices and knowledges was evident in the relation that the farmers have with their space, with elements related to transfer the traditional knowledge and preparation of food and, finally, to a process of alimentar and nourishment security for individuals and local collectivities. Therefore, the knowledge and the practices express collective and individual history, saying about the local life.

Therefore, the knowledge and the practices express collective and individual history, saying about the local life.Esta dissertação pretendeu investigar os saberes e os fazeres envolvidos na alimentação de agricultores familiares do município de Jaboticaba/RS, a partir de fenômenos alimentares descritos na história da alimentação e da narrativa destes moradores locais. Nesse sentido, o trabalho pensa sobre as relações alimentares que os sujeitos possuem com o seu ambiente e entre si, levando em conta que as práticas são realizadas conforme apropriações do espaço agroecológico em que os grupos vivem. Para tanto, houve interação direta com essas pessoas, realizando-se entrevistas, observações das práticas alimentares e análise das narrativas sobre a memória das atividades alimentares desenvolvidas pelo grupo de agricultores. Desse modo, partindo da história da alimentação, investigou-se as relações dos diferentes grupos humanos com a comida, apresentando uma descrição analítica dos movimentos realizados pelos sujeitos no sistema alimentar, bem como uma análise das relações estabelecidas entre espaço-sujeito-alimento. Assim, verificou-se que a orientação quanto a preferir consumir determinados alimentos - para o grupo familiar de agricultores e também para o indivíduo particularmente - é realizada conforme um conjunto de vivências situadas ao longo da trajetória social do grupo e também por meio das representações e significações atribuídas à comida. Desse modo, a partir da memória do tempo antigo e das percepções sobre os saberes e os fazeres alimentares do sistema alimentar local, observou-se: a) diferenciações e tipificações quanto ao trabalho empregado nas atividades relacionadas a alimentação; b) distinções quanto ao significado que a comida possui para os diferentes grupos, diferentes ocasiões sociais e finalidades no uso dela; c) transformações no comer - com redução da presença do alimento cultivado para o consumo interno do grupo familiar, decorrido em grande medida pela inserção de produtos comprados em mercados. Tais fenômenos revelaram um processo de erosão cultural alimentar, pois influenciaram na transformação das práticas e saberes alimentares das famílias agricultoras. Logo, o processo de significação e ressignificação dos saberes e fazeres alimentares ficou evidente nos modos de relação do agricultor com seu espaço, com elementos ligados à transmissão dos saberes tradicionais de apropriação e preparação da comida e, por fim, com um processo de segurança alimentar e nutricional para os sujeitos e coletividades locais.
