Alimentos funcionais e seu potencial antioxidante: contextualizando a química na escola

Resumo: | The present work used the theme "Functional Foods and their Antioxidant Potential" as the theme generating chemical and scientific knowledge to contribute to the teaching-learning process. The objective of this study was to evaluate the pedagogical implications of the chemical concepts involved in this topic. The research methodology is characterized by being predominantly qualitative and exploratory in nature. It was developed in two stages: the first consisted of a bibliographical survey about publications that dealt with the theme in the search for theoretical and methodological subsidies for the planning of interventions to be developed in the classroom; the second stage consisted of the application in the classroom through two thematic workshops structured in the three pedagogical moments (initial problematization, organization of knowledge and application of knowledge) using experimental activities and case study. Participating subjects were third-year high school students from a public school in the city of Santa Maria-RS-Brazil. Data were collected using instruments such as questionnaires, quiz (Kahoot application), experimental activities and case study, and were analyzed through discursive textual analysis. According to the results analyzed, it was concluded that the thematic used in this research provided the students with an aid to the understanding of scientific contents such as organic functions and oxidation-reduction. Students related Chemistry to everyday life and Functional Foods. They also showed great motivation for the activities mainly by the experimental ones and by the game with the application Kahoot. Thus, it can be concluded that the theme used in conjunction with the differentiated activities, provided a more contextualized teaching in favor of student learning. |

Thus, it can be concluded that the theme used in conjunction with the differentiated activities, provided a more contextualized teaching in favor of student learning.Coordenação de Aperfeiçoamento de Pessoal de Nível Superior - CAPESO presente trabalho utilizou a temática “Alimentos Funcionais e seu Potencial Antioxidante” como tema gerador de conhecimentos químicos e científicos para contribuir com o processo de ensino-aprendizagem. Teve-se por objetivo avaliar as implicações pedagógicas em relação aos conceitos químicos envolvidos nesta temática. A metodologia da pesquisa é caracterizada por ser predominantemente qualitativa e de caráter exploratório, foi desenvolvida em duas etapas: a primeira consistiu-se em um levantamento bibliográfico sobre publicações que versavam sobre a temática na busca de subsídios teóricos e metodológicos para o planejamento das intervenções a serem desenvolvidas em sala de aula; a segunda etapa consistiu-se na aplicação em sala de aula mediante duas oficinas temáticas estruturadas nos três momentos pedagógicos (problematização inicial, organização do conhecimento e aplicação do conhecimento) utilizando atividades experimentais e estudo de caso. Os sujeitos participantes foram estudantes da terceira série do ensino médio de uma escola pública da cidade de Santa Maria-RS-Brasil. Os dados obtidos foram coletados mediante instrumentos como questionários, Quiz (aplicativo Kahoot), atividades experimentais e estudo de caso, e foram analisados por meio da análise textual discursiva. De acordo com os resultados analisados, concluiu-se que a temática utilizada nesta pesquisa forneceu aos estudantes um auxilio para o entendimento dos conteúdos científicos tais como funções orgânicas e oxidação-redução. Os estudantes relacionaram a Química com a vida cotidiana e os Alimentos Funcionais. Mostraram também grande motivação pelas atividades principalmente pelas experimentais e pelo jogo com o aplicativo Kahoot.
