Análise sensorial de cupcakes proteicos para praticantes de musculação

Resumo: | The search for stereotyped aesthetic standards have grown vastly which intensified the search for gyms, and the search for better physical condition for health maintenance. In this regard it is essential that nutrition and exercise are always interconnected, since a relationship between both promotes proper performance for physical activity and anabolism as well as various other benefit health. However, man is being dominated by technology and industrialized foods and due to lack of time that modern life brings, feed inappropriately, mainly for the practice of physical exercise, as to the body fitness. Based on this, this study aimed to perform sensory analysis of two protein Cupcakes for body fitness, a pre-workout (A) and other post-workout (B). These will serve as a foundation in feed of these practicing, promoting practicalities to day to day, as its composition meets the demands of exercise. Evaluated the organoleptic characteristics (aroma, color, softness, texture, flavor and general aspect) and the purchase intent through Hedonic scale Structured 01-09 points and 01-05 points respectively. Measured the acceptance and purchase intent of products by 51 tasters 18 to 30 years old, anaerobium practitioners, where 56.9% were male and 43.1% female. The results showed 100% acceptance for both the preparations (A) and (B). Regarding the intention to purchase, 80.4% in Cupcake (A) and 96.1% in Cupcake (B) certainly buy the product. |

Neste sentido é fundamental que a nutrição e o exercício físico estejam sempre interligados, visto que uma relação entre ambos promove o desempenho adequado para a atividade física e o anabolismo, bem como diversos benefícios á saúde. Entretanto, o homem vem sendo dominado pela tecnologia e alimentos industrializados devido à falta de tempo que a vida moderna ocasiona se alimentam de forma inadequada, principalmente para a prática de exercícios físicos, como na musculação. Com base nisso, esse trabalho teve como objetivo realizar análise sensorial de dois Cupcakes proteicos para praticantes de musculação, um pré-treino (A) e outro pós-treino (B). Esses servirão como alicerce na alimentação destes praticantes, promovendo praticidade ao dia-dia, visto que sua composição supre as demandas do exercício físico. Avaliaram-se as características organolépticas (aroma, cor, maciez, textura, sabor e aspecto geral) e o intuito de compra por meio de escala Hedônica Estruturada de 01 a 09 pontos e de 01 a 05 pontos, respectivamente. Mediram-se a aceitação e a intenção de compra dos produtos por 51 provadores de 18 a 30 anos de idade, praticantes de musculação, onde 56,9% eram do sexo masculino e 43,1% do sexo feminino. Os resultados mostraram 100% de aceitação para ambas as preparações (A) e (B).
