Resumo: | Objective: To realize a food analysis and to perform a sensorial perception test of a new homemade, nutritionally adequate and low cost dietary supplement. Methods: The sensorial analysis was performed in 50 children (5 to 10 years old) and their respective parents attempted at the Growth Disorders Outpatient Clinic of the Escola Paulista de Medicina Federal University of São Paulo from June 2014 to November 2015. Data such as anthropometry, socioeconomic and nutritional status were also evaluated. The dietary supplement composition is based on five used regular ingredients: maize starch, water, egg white, gelatin and soy oil. All the recipe ingredients were quantified to create one standard and reproducible compound. The dietary supplement sensorial analysis was performed individually using two age adequate scales, one for children and other for adults. Each recipe had a dietary composition evaluated before the sensorial analysis. Results: One portion of the home homemade supplement (250 grams per day) provide 364.80 calories (47.65 grams from carbohydrate, 6.61 grams from protein and 16.24 grams from lipids). The estimate cost was that 6.55% of the minimum wage/month. The amount of energy was 42% higher than commercial ones. The children sensorial analysis indicated that 74% approved average score was 3.5 of 5 points). The adult sensorial analysis indicated that 92% approved the product (average score was 7 of 9 points). Conclusion: This particular homemade dietary supplement provides high energy, adequate nutritional composition, is very palatable and present low cost to prepare. |

Método: Foram avaliadas cinqüenta crianças (5 a 10 anos de idade) e suas respectivas mães, atendidas no ambulatório Distúrbios do Crescimento da Escola Paulista de Medicina ? UNIFESP, no período de junho de 2014 a novembro de 2015; dados antropométricos, socioeconômicos e nutricionais foram coletados durante a realização do teste de aceitação alimentar. O suplemento foi compostos a partir de cinco alimentos de baixo custo e facilmente encontrados: o amido de milho, a água, a clara de ovo, a gelatina e o óleo de soja. A cada dupla responsável e criança foram oferecidas, individualmente e em ambientes separados, a mesma amostra do suplemento. As variações das receitas foram analisada quanto a sua composição bromatológica antes de ser oferecida para análise da aceitação realizada por meio de duas escalas sensoriais, uma definida e adequada para crianças e outra para adultos. Resultados: A análise bromatológica evidenciou que uma porção do suplemento (250 gramas) fornece 364,8 calorias e as seguintes quantidades de macronutrientes: 47,65 gramas de carboidrato, 6,61 gramas de proteína e 16,24 gramas de lipídeos. Comparado aos suplementos comerciais conseguiu ser 42% superior em densidade energética. O custo mensal total do preparo deste suplemento representa 6,55% do valor do salário mínimo; suplementos industrializados podem gerar gastos de até 9,06% do salário mínimo. A análise sensorial da aceitação mostrou reação positiva por 74% das crianças (média de 3,5 pontos) e 94% dos responsáveis (média de 7 pontos).
