Resumo: | The coffee industry stands out in the domestic market, since Brazil is one of the biggest producers in the world. This culture is influenced by uncontrollable factors, such as physiological, environmental, cultural, and market aspects. It is then necessary for producers to properly control their costs to succeed in their business. The objective was to identify the averages of the production cost variables of arabica coffee that present significant differences between the main cities of Brazil in the period from 2013 to 2016. The research is classified as descriptive, documentary and quantitative. For the analysis, descriptive statistics, the Kruskal-Wallis test, were used to identify differences in the average between cities and the Dunn Test, to identify which cities present differences in their averages. The results showed that Cristalina / GO, whose cultivation is semi-densified and irrigated, presents a higher average for Expenses with Depreciation, followed by Luís Eduardo Magalhães/BA, who uses state-of-the-art technology in coffee production. Venda Nova dos Imigrantes/ES has the lowest average for this variable, and uses little technology in production, followed by Manhuaçu/MG, which uses family farming and medium technology. For Income Factor, Cristalina/GO also registers the highest average, which may be related to the investments made in coffee production or the value of land, which may be higher in this region. For this variable, Venda Nova dos Imigrantes also has the lowest average, followed by Manhuaçu/MG, which can be explained by the investments made in coffee cultivation, which are, respectively, low and medium for these two cities. |

É necessário, então, que os produtores controlem adequadamente seus custos para obter sucesso em seu negócio. O objetivo foi identificar as médias das variáveis de custos de produção do café arábica que apresentam diferenças significativas entre as principais cidades polos do Brasil, no período de 2013 a 2016. A pesquisa classifica-se como descritiva, documental e quantitativa. Para análise, utilizaram-se a estatística descritiva, o Teste de Kruskal-Wallis e o Teste de Dunn. Os resultados evidenciaram que Cristalina/GO, cujo cultivo é semi-adensado e irrigado, apresenta maior média para Despesas com Depreciação, seguida de Luís Eduardo Magalhães/BA, que usa tecnologia de ponta na produção de café. Venda Nova dos Imigrantes/ES possui a menor média para essa variável, e usa pouca tecnologia na produção, seguida de Manhuaçu/MG, que emprega agricultura familiar e média tecnologia. Para Renda de Fatores, Cristalina/GO também registra a maior média, o que pode estar relacionado aos investimentos realizados ou ao valor das terras, sugerindo ser alto nessa região. Para essa variável, Venda Nova dos Imigrantes também possui a menor média, seguida de Manhuaçu/MG, que pode ser explicado pelos baixos investimentos realizados no cultivo do café. Este trabalho contribui para o conhecimento das regiões mais viáveis economicamente para a cultura do café arábica, e na identificação dos custos mais significativos, auxiliando o produtor na gestão de custos e, consequentemente, no desempenho do negócio.
