Resumo: The aim of this research is to study the main characteristics of the effluents from the food industry. Other relevant aspects are: sources of effluents, production processes and composition. The food industry wastewater is commonly rich in organic matter, food remains and traces of cleaning products. Due to the diversified composition, many treatment steps are required. To understand the usual steps in the treatment of effluents from each industry, a deepening was made in the most common stages of treatment levels adopted in Brazil for this purpose: preliminary, primary, secondary and tertiary.
