Resumo: Companies are on the lookout for reliable partners that offer high quality services, including suppliers. The decision-making process when choosing these involves several stakeholders with different objectives, which requires that different types of relevant criteria be considered. Multiple-criteria decision analysis/making (MCDM) is a field of operational research in which alternatives are analyzed against a set of multiple criteria. The AHP is a MCDM method which deals with complex decisions involving tangible and intangible elements, by structuring a complex decision process in terms of hierarchical decision criteria and their associated priorities. This paper aims to use the AHP method in the selection of a new supplier in a coffee roasting plant. To achieve this objective, an applied, exploratory and descriptive research was carried out, through bibliographic research and a case study, collecting and analyzing the data from the perspective of the AHP method. The objective was achieved by introducing a formal method to the decision-making process.

A análise de decisão multicritério é um campo da pesquisa operacional em que alternativas de decisão são analisadas em relação a um conjunto de múltiplos critérios. O método AHP é uma ferramenta deste campo para lidar com decisões complexas que envolvem elementos tangíveis e intangíveis, ao estruturar um processo de decisão complexo em termos de critérios hierárquicos de decisão e de suas prioridades associadas. Este trabalho busca aplicar o método AHP na seleção de novo fornecedor em uma fábrica de torrefação de café. Para atingir este objetivo realizou-se uma pesquisa de natureza aplicada, exploratória e descritiva através de pesquisa bibliográfica e um estudo de caso, coletando e analisando os dados sob a perspectiva do método utilizado.
