Resumo: This thesis was developed in order to evaluate the effect of the inclusion levels of mesquite pod meal (MPM), replacing corn meal in the diets of feedlot lambs, on performance, carcass characteristics and flesh quality of the animals. A total of 30 ½ Dorper x ½ Santa Inês ram lambs were used, with an average initial weight of 18.08 ± 1.87 kg and average initial age between 4 and 6 months, divided into CRD, in four experimental treatments with six replications that consisted of inclusion levels of MPM, replacing corn with 0%, 33%, 66% and 100% in DM. After 15 days of adaptation, six animals were slaughtered for their carcass. The 24 remaining animals were housed in individual pens where they received complete diets containing 20% hay and 80% concentrate. After the experimental period of 56 days, the animals were slaughtered in refrigerator slaughterhouse. A quadratic effect was observed (P<0.05) on the intake of all nutrients. An increasing linear effect (P<0.05) was observed on the digestibility of DM, OM, CP, NDF and NFC. The final body weight of the animals, weight gain, average daily gain, feed conversion compared to the daily carcass gain, rib eye area and fat thickness were affected (P<0.05) by the replacement levels, showing a quadratic effect. The data indicated a decreasing linear effect (P<0.05) for weight neck, legs, palettes, loins and topside, hard cushion, duckling, rump, sirloin, muscle, bone and the ratio flesh:bone of the animals. However, in relative percentage values, such effect of replacement was not observed. There was no effect (P>0.05) for values of pHi, pHf, Ti and Tf, and neither for the components of the chemical composition of lamb meat quality or the physical parameters. A quadratic effect was observed (P <0.05) for the replacement levels for acids C18:0, C23:0, C17:1, C18:1n9c, C20:1, C18:2n6t, C18:2n6c, C18:3n6, C18:3n3 and C20:5n3 and the total polyunsaturated acids. There was a positive linear effect (P <0.05) for C17:0, C22:0 and C16:1 and a negative one for C18:1n9t. The replacement level of 33 % was compatible with the control diet, indicating that, at this level, it is recommended to replace the corn meal by mesquite pod meal. The inclusion of MPM in the diet of the lambs in confinement does not change the parameters of meat quality and keeps the fatty acid profile similar to the one found in the literature for sheep meat.

Foram utilizados 30 cordeiros machos, inteiros, ½ Dorper x ½ Santa Inês, com peso médio inicial de 18,08 ± 1,87 kg e idade média inicial entre 4 e 6 meses, distribuídos em DIC, em quatro tratamentos experimentais com seis repetições, que consistiram de níveis de inclusão do FVA em substituição ao milho, sendo 0, 33, 66 e 100% na MS. Após 15 dias de adaptação, seis animais foram abatidos para se obter o rendimento de carcaça inicial. Os 24 animais restantes foram alojados em baias individuais, onde receberam dietas completas, contendo 20% de feno e 80% de concentrado. Após o período experimental de 56 dias, os animais foram abatidos em frigorífico industrial. Houve efeito quadrático (P<0,05) sobre os consumos de todos os nutrientes avaliados. Verificou-se efeito linear crescente (P<0,05) sobre os coeficientes de digestibilidade da MS, MO, PB, FDNcp e CNF. O peso corporal final dos animais, o ganho de peso, o ganho médio diário, a conversão alimentar em relação ao ganho de carcaça diário, a área de olho de lombo e a espessura de gordura foram afetados (P<0,05) pelos níveis de substituição, apresentando efeito quadrático. Foi verificado efeito linear decrescente (P<0,05) para peso de pescoço, pernas, paletas, lombos e de coxão mole, coxão duro, patinho, alcatra, lombo paulista, músculo, ossos e relação carne:osso dos animais; entretanto, em valores relativos de porcentagem, não foi constatado efeito da substituição. Não houve efeito (P>0,05) para os valores de pHi, pHf, Ti e Tf, bem como para os componentes da composição química da carne dos cordeiros e parâmetros físicos de qualidade. Houve efeito quadrático (P<0,05) dos níveis de substituição para os ácidos C18:0, C23:0, C17:1, C18:1n9c, C20:1, C18:2n6t, C18:2n6c, C18:3n6, C18:3n3 e C20:5n3 e total de poli-insaturados. Houve efeito linear positivo (P<0,05) para C17:0, C22:0 e C16:1 e negativo para C18:1n9t. A substituição no nível de 33% apresentou-se compatível com a dieta controle, indicando que, nesse nível, torna-se viável a substituição do fubá de milho por farelo de vagem de algaroba.
