Araticum, cagaita, jatobá, mangaba e pequi do Cerrado de Minas Gerais: ocorrência e conteúdo de carotenóides e vitaminas

Resumo: Due to its continental dimensions, the Brazil has infinity of biomes, among them stands out the Cerrado. This biome presents a wide vegetable diversity that produces fruit that have unique characteristics and should be better characterized and exploited. The agricultural-economic exploration of the fruits from the Cerrado contributes to income generation, especially in families belonging to vulnerable socially groups. Moreover, due to its excellent nutritional characteristics, these fruits constitute a good alternative food may play an important role in improving the human nutrition. In this context, the present study aimed to evaluate the physical characteristics, - - -cryptoxanthin and lycopene), vitamin C (ascorbic - - - -tocopherol and tocotrienol) and folates (tetrahydrofolate, 5-methyltetrahydrofolate and 5- formyltetrahydrofolate) in fruits of the Cerrado of the Minas Gerais. Araticum, cagaita, jatobá, mangaba and pequi of the Cerrado of Minas Gerais were used. The fruits were collected in harvest season, selected according to maturation degree and absence of injuries, and sanitized. Subsequently, measurements mass, diameters and length were performed and the fruit pulp yield calculated. The values of titratable acidity, soluble solids, pH in the fresh pulp of the fruits were determined. Moisture, ash, proteins, lipids and total dietary fiber were determined in the fresh pulp of araticum, cagaita, jatobá and mangaba, and pequi pulp cooked. The moisture was determined in greenhouse at 105 ° and the ash in muffle at 550 ° The proteins were C, C. determined by the micro-kjeldhal method, and the total dietary fiber, by the non-enzymatic gravimetric method. Lipid contents were determined in Soxhlet extractor. The analyses of vitamin C and carotenoids were carried out by HPLC-DAD and of vitamin E and folates, by HPLC, with fluorescence detection. The fruits of the Cerrado of Minas Gerais showed attractive colors and several shapes. The araticum, cagaita and mangaba showed high pulp yield, while pequi and jatobá presented low pulp yield. The soluble solids in fruits ranged from 4.84 ° Brix for the jatobá, to 22.54 ° Brix, for araticum. The moisture ranged from 8.75 g 100g-1, for the jatobá, the 91.56 g 100g-1, for cagaita. The jatobá presented the greater content of dietary fiber (44.28 g 100g-1) and low content of dietary fiber was observed in cagaita (1.51 g 100g - ). The lipid content ranged from 0.57 g 100g-1, for cagaita, to 33.07 g 100g-1, for pequi. The energy value ranged from 29.83 kcal 100g-1, for cagaita, to 317.19 kcal 100g-1, for pequi. The greater carotenoid contents were observed in pequi (8.10 mg 100g-1) and araticum (4.98 mg 100g-1) (p < 0.05), which were excellent sources of vitamin A. The cagaita and mangaba were excellent sources of vitamin C begin observed contents of 165.82 and 34.11 mg 100-1, respectively. Mangaba provide to be excellent source of folates (98.31 mg 100g-1), and jatobá was good source of this vitamin (53.46 mg 100g-1). The fruits were not considered sources of vitamin E. Araticum, cagaita, jatobá, mangaba and pequi of the Cerrado from the Minas Gerais presented excellent nutritional value. Some of these fruits provide to be rich in macronutrients such as dietary fiber and lipids, and micronutrients such as carotenoids and vitamins. These fruits proved to be an important alternative food can contribute to access to adequate food, particularly in regions with high level of food insecurity and where traditional food of the Brazilian diet and considered sources of these nutrients may be scarce or absent.

Esse bioma possui uma grande diversidade vegetal que produz frutos que apresentam características peculiares e que devem ser mais bem caracterizados e explorados. A exploração agrícola-econômica dos frutos do Cerrado, por meio do extrativismo, contribui para a geração de renda, em especial de famílias pertencentes a grupos em vulnerabilidade social. Além disso, devido às suas excelentes características nutricionais, esses frutos constituem boa alternativa alimentar podendo contribuir de forma importante na melhoria da alimentação e conseqüentemente no aporte nutricional individual. Nesse contexto, o presente estudo teve como objetivo avaliar as características físicas, a composição química, a ocorrência e o conteúdo de carotenóides ( -caroteno, -caroteno, -criptoxantina e licopeno), vitamina C (ácido ascórbico e ácido desidroascórbico), vitamina E ( -, tocotrienol) e folatos (tetraidrofolato, -, - e -tocoferol e 5-metiltetraidrofolato e 5- formiltetraidrofolato) de frutos do Cerrado de Minas Gerais. Foram utilizados frutos do araticum, cagaita, jatobá, mangaba e pequi coletados em época de safra no Cerrado de Minas Gerais. No laboratório, foram avaliadas as características físicas dos frutos (massa, diâmetros, comprimento e rendimento). Foram determinadas a acidez titulável, sólidos solúveis e pH na polpa in natura dos frutos. Umidade, cinzas, proteínas, lipídios e fibra alimentar total foram determinadas na polpa in natura de araticum, cagaita, mangaba e jatobá, e polpa cozida de pequi. A umidade foi determinada em estufa a 105 ° e as cinzas em mufla a 550 ° As proteínas foram C C. determinadas pelo método micro-kjeldhal e a fibra alimentar total pelo método gravimétrico não enzimático. Os lipídios foram determinados em extrator Soxhlet. As análises de vitamina C e carotenóides foram feitas por cromatografia líquida de alta eficiência (CLAE), com detecção UV-visível e a de vitamina E e folatos por CLAE, com detecção por fluorescência. Os frutos do Cerrado de Minas Gerais apresentaram cores atrativas e formas variadas. O araticum, a cagaita e a mangaba apresentaram rendimento de polpa elevado enquanto que o pequi e o jatobá apresentaram baixo rendimento de polpa. Os sólidos solúveis nos frutos variaram de 4,84 oBrix, para o jatobá, a 22,54 oBrix, para o araticum. A umidade variou de 8,75 g 100g-1, para o jatobá, a 91,56 g 100g-1, para a cagaita. O jatobá apresentou o maior conteúdo de fibra alimentar (44,28 g 100g-1) e o menor conteúdo de fibra alimentar foi observado na cagaita (1,51 g 100g-1). O teor de lipídios variou de 0,57 g 100g-1, para a cagaita, a 33,07 g 100g-1, para o pequi. O valor energético variou de 29,83 kcal 100g-1, para a cagaita, a 317,19 kcal 100g-1, para o pequi. Os maiores conteúdos de carotenóides foram observados no pequi (8,10 mg 100g-1) e araticum (4,98 mg 100g-1) (p < 0,05), os quais mostraram-se excelentes fontes de vitamina A. A cagaita e a mangaba foram excelentes fontes de vitamina C, sendo observados teores de 165,82 e 34,11 mg 100-1, respectivamente. A mangaba mostrou-se excelente fonte de folatos (98,31 vitamina (53,46 100g-1), e o jatobá foi boa fonte dessa 100g-1). Os frutos analisados não foram fontes de vitamina E. Os frutos do Cerrado de Minas Gerais apresentaram excelente valor nutricional, sendo alguns deles ricos em macronutrientes, como fibra alimentar e lipídios, e micronutrientes, como carotenóides e vitaminas.
