History of Gastronomy courses in the context of Brazilian Professional and Technological Education

Resumo: This article is the result of reviews of bibliographies referring to the emergence of gastronomy courses in the context of Professional and Technological Education, historically understood as an education for the training of workers. Through research in books, scientific articles and documents, we sought to understand the social role of the gastronomy professional and how courses in this area prepare professionals for the world of work.

A través de la investigación en libros, artículos científicos y documentos, se buscó comprender el rol social del profesional de la gastronomía y cómo los cursos en esta área preparan a los profesionales para el mundo laboral.O presente artigo é o resultado de revisões de bibliografias referentes ao surgimento dos cursos de gastronomia no cenário da Educação profissional e Tecnológica, compreendida historicamente como uma educação para a formação dos trabalhadores.
