A segurança alimentar é analisada sob dois ângulos de aplicação. O primeiro é o qualitativo (food safety) que busca oferecer produtos livres de contaminação química, biológica, física ou de outras substâncias, que põem em risco a saúde do homem e assegura alimentos saudáveis para o consumidor. O segundo (food security) significa garantir o acesso ao alimento que supra as calorias diárias necessárias para cada ser humano, para assim poder erradicar a fome da maioria da população do globo. Nesse contexto, analisou-se o tema alimentos transgênicos, dando especial atenção à soja transgênica. A pesquisa bibliográfica foi realizada por meio de um estudo exploratório sobre os conceitos de segurança alimentar, alimentos geneticamente modificados, de fome, bem como sobre os conceitos de qualidade alimentar (food safety) e quantidade alimentar (food security), que possibilitou a discussão teórica deste trabalho. A partir da análise da literatura conclui-se que as características funcionais da soja transgênica são as mesmas da soja convencional, alem de não existirem estudos afirmando ou negando os danos que a soja transgênica causaria ao consumidor. The alimentation safety is analyzed under two angles. The first is the qualitative (food safety) that propose to offer products free from chemical, biological, physics and other substances contamination, that put in risk the man's health and it assures healthy for the consumers. The second (food security) it means to guarantee the access to the food that supplies the necessary daily calories for each human being, in order to eradicate the hunger of most of the population of the globe. In that context, the theme of transgenic was analyzed with special attention to the transgenic soy. The bibliographical research was accomplished through an exploratory study on alimentation safety's concepts, organism genetically modified, of hunger, as well as on the concepts of food safety and food security. That made possible the theoretical discussion of this work. Starting from the analysis of the literature it is concluded that the functional characteristics of the transgenic soy are the same of the conventional soy. Besides, the literature does not confirm or deny the damages that the transgenic soy would cause to the consumer.
