Resumo: The objective was to carry out lamb carcass evaluation in a confinement system fed with 100% concentrated diet and diet with the inclusion of residual oil, in order to identify which diet provides the best performance. Fifteen male sheep, not castrated, crossbred from Dorper × Santa Inês, aged six months, confined in collective pens for 50 days were used. The treatments were as follows: Control Diet (TC) - Tifton hay + concentrate; High grain diet (AG) - 100% commercial diet for sheep; Diet with residual frying oil (ORF) - Tifton hay + concentrate + residual frying oil. Morphometric measurements were collected weekly during the confinement period: withers height, croup height, chest circumference and body length for carcass evaluation. There was no statistical difference for dry matter consumption, weight gain, croup height, withers height, body length, chest circumference, carcass yield, carcass weight, carcass patella perimeter, carcass shank length and perimeter carcass shank (P> 0.05) between the control diet and inclusion of 6% residual oil. Although it does not differ statistically from the control diet, the inclusion of residual oil promoted superior dry matter consumption, total weight gain, hot and cold carcass weight and hot carcass thoracic perimeter in relation to animals fed a high grain diet. The diet with inclusion of 6% of residual oil provided better productive results and performance to the lambs.

The diet with inclusion of 6% of residual oil provided better productive results and performance to the lambs.El objetivo fue realizar la evaluación de la canal de cordero en un sistema de confinamiento alimentado con una dieta 100% concentrada y una dieta con inclusión de aceite residual, con el fin de identificar qué dieta proporciona el mejor desempeño. Se utilizaron quince machos, no castrados, cruzados de Dorper × Santa Inês, de seis meses de edad, confinados en corrales colectivos durante 50 días. Los tratamientos fueron los siguientes: Dieta Control (TC) - Heno Tifton + concentrado; Dieta alta en granos (AG): dieta 100% comercial para ovejas; Dieta con aceite de fritura residual (ORF) - Heno de Tifton + concentrado + aceite de fritura residual. Las medidas morfométricas se recolectaron semanalmente durante el período de confinamiento: altura de la cruz, altura de la grupa, circunferencia del pecho y longitud del cuerpo para la evaluación de la canal. No hubo diferencia estadística para el consumo de materia seca, aumento de peso, altura de grupa, altura de cruz, longitud corporal, circunferencia del pecho, rendimiento de la canal, peso de la canal, perímetro de la rótula de la canal, longitud y perímetro de la caña de la canal. la caña de la canal (P> 0.05) entre la dieta de control y la inclusión de aceite residual al 6%. Aunque no difiere estadísticamente de la dieta de control, la inclusión de aceite residual promovió un consumo superior de materia seca, ganancia de peso total, peso de la canal caliente y fría y perímetro torácico de la canal caliente en relación con los animales alimentados con una dieta alta en granos. La dieta con inclusión de 6% de aceite residual proporcionó mejores resultados productivos y desempeño a los corderos.Objetivou-se, realizar avaliação de carcaça de cordeiros em sistema de confinamento alimentados com dieta 100% concentrado e dieta com inclusão de óleo residual, de modo a identificar qual dieta proporciona melhor desempenho. Foram utilizados 15 ovinos machos, não castrados, mestiços de Dorper × Santa Inês, com seis meses, confinado em baias coletivas por 50 dias. Os tratamentos foram os seguintes: Dieta Controle (CT) - Feno de Tifton + concentrado; Dieta de alto grão (AG) - Dieta 100% concentrado comercial para ovinos; Dieta com óleo residual de fritura (ORF) - Feno de tifton + concentrado + óleo residual de fritura. Semanalmente durante o período de confinamento foram coletadas as medidas morfométricas: altura de cernelha, altura de garupa, perímetro torácico e comprimento corporal para avaliação de carcaça. Não houve diferença estatística para consumo de matéria seca, ganho de peso, altura de garupa, altura de cernelha, comprimento do corpo, perímetro torácico, rendimento de carcaça, peso de carcaça, perímetro de patela de carcaça, comprimento de pernil da carcaça e perímetro de pernil da carcaça (P>0,05) entre a dieta controle e com inclusão de 6% de óleo residual. Apesar de não diferir estatisticamente da dieta controle, a inclusão de óleo residual promoveu superioridade de consumo de matéria seca, ganho de peso total, peso de carcaça quente e fria e perímetro torácico de carcaça quente em relação aos animais alimentados com dieta de alto grão.
