Occurrence of Unstable non-acid milk (UNAM) on commercial farms in the extreme west of Santa Catarina

Resumo: | The objective was to differentiate dairy farms and correlate their characteristics with the occurrence of Unstable non-acid milk (UNAM) in the far west of Santa Catarina. In addition to ascertaining the lowest graduation in the alcohol test for milk selection in a commercial dairy. Assessments were made at 45 farms that sold milk in the commercial dairy. Management and production characteristics were identified between August and December of 2016. Milk samples were collected biweekly from the cooling tank between August 2016 and July 2017. They were analyzed for stability to alcohol testing in gradations from 72 to 80 % at 2% intervals, in addition to the boil test, titratable acidity, and pH. The Pearson's Chi-square test was used to evaluate the difference between the UNAM in the graduations tested and the regression analysis to estimate the effect of quantitative variables on the accumulated UNAM. Regression analysis as performed to verify the effect of the month of the year on the UNAM. The milk production in 91% of the farms was in the pasture system with supplementation and the rest in semiconfinement. The area of the farm was 23.6 ± 16 ha to keep 23.6 ± 9.3 lactating cows producing on average of 16.6 ± 4.9 liters/cow. The incidence of UNAM increased concomitantly with the increase in the alcoholic grade used in the test and, in February, the lowest grade for identification of UNAM was found. The study concluded that the accumulated UNAM correlated negatively with the area to produce food and animal productivity. The 76% alcohol content is the best alternative to select commercialized milk. |

Además de determinar la graduación más baja en la prueba de alcohol para la selección de leche en una lechería comercial. Se realizaron evaluaciones en 45 granjas que vendían leche en la lechería. Las características de manejo y producción se identificaron entre agosto y diciembre de 2016. Las muestras de leche se recolectaron cada dos semanas del tanque de enfriamiento entre agosto de 2016 y julio de 2017. Se analizaron las pruebas de estabilidad al alcohol en los grados 72 a 80 % en intervalos de 2%, además de la prueba de ebullición, acidez titulable y pH. La prueba de chi-cuadrado se utilizó para evaluar la diferencia entre el LINA en las graduaciones evaluadas y el análisis de regresión para estimar el efecto de las variables cuantitativas en el LINA acumulado. Para verificar el efecto del mes del año en la LINA, se realizó un análisis de regresión. La producción de leche en el 91% de las granjas estaba en el sistema de pastoreo con suplementación y el resto en semi-confinamiento. El área de la granja fue de 23,6 ± 16 ha para mantener 23,6 ± 9,3 vacas lactantes que produjeron un promedio de 16,6 ± 4,9 litros / vaca. La incidencia de LINA aumentó concomitantemente con el aumento del grado alcohólico utilizado en la prueba y, en febrero, se encontró el grado más bajo para la identificación de LINA. El estudio concluyó que la LINA acumulada se correlacionó negativamente con el área para producir alimentos y productividad animal. El contenido de alcohol del 76% es la mejor alternativa para seleccionar leche comercializada.Objetivou-se diferenciar propriedades leiteiras e correlacionar suas características com a ocorrência de Leite Instável Não Ácido (LINA) no Extremo Oeste catarinense, além de averiguar a menor graduação no teste do álcool para seleção do leite em um laticínio comercial. As avaliaçòes foram feitas em 45 propriedades que comercializavam leite no laticínio. As características de manejo e produção foram identificadas entre agosto e dezembro de 2016. Amostras de leite foram coletadas quinzenalmente do tanque de resfriamento entre agosto de 2016 e julho de 2017. Elas foram analisadas para a estabilidade ao teste do álcool nas graduações de 72 a 80% em intervalos de 2%, além do teste de fervura, acidez titulável e pH. O teste do Qui-quadrado foi usado para avaliar a diferença entre o LINA nas graduações testadas e a análise de regressão para estimar o efeito das variáveis quantitativas sobre o LINA acumulado. Para verificar o efeito do mês do ano sobre o LINA foi realizada a análise de regressão. A produção de leite em 91% das propriedades era em sistema a pasto com suplementação e o restante em semiconfinamento. A área das propriedades era 23,6 ± 16ha para manter 23,6 ± 9,3 vacas em lactação produzindo em média 16,6 ± 4,9 litros/vaca. A incidência de LINA aumentou concomitantemente ao aumento da graduação alcóolica utilizada no teste e, no mês de fevereiro foi encontrada a menor graduação para identificação de LINA.
