Influence of filamentous fungi and yeasts on bacterial count and somatic cells in samples of raw bovine milk

Resumo: In Brazil, in general, milk is obtained in deficient hygienic-sanitary conditions, consequently, it presents a high number of contaminating microorganisms. Microbial growth in milk causes great economic damage to the processing industries. Fungi play an important role in the dairy industry, as they can promote deterioration or trigger undesirable fermentation and / or maturation to milk derivatives. The present study aimed to investigate the relationship between total bacterial count (TBC) and the isolation of filamentous fungi and yeasts in milk samples from the expansion tank. Milk from 160 farms was monitored for 6 months for somatic cell count (SCC) and TBC by official methods. Samples of 120 properties were analyzed for TBC and fungal isolation. In 102 samples (85%) filamentous fungi (Acremonium sp., Alternaria spp., Aspergillus sp., Cladosporium sp., Fusarium sp., Mucor spp.,  Penicillium sp.) and / or Candida sp., Geotrichum sp., Pichia sp., Prothoteca sp., Rodothorula sp., Trichosporon sp.) with an average of 1,284 UFC/mL and TBC of 133,000 UFC/mL. In 14 negative samples for fungi, an average of 652,000 CFU/mL was obtained for TBC. The difference in TBC between positive and negative samples for fungi was significant (p <0.001), demonstrating the influence of fungi on bacterial growth and milk TBC. The presence of fungi and the potential risk of toxin production in raw milk and its derivatives should be investigated, as well as the relationship between fungal isolation and low milk TBC.

El crecimiento microbiano en la leche causa un gran daño económico a las industrias de procesamiento. Los hongos juegan un papel importante en la industria láctea, ya que pueden promover el deterioro o desencadenar fermentación y / o maduración no deseadas en los productos lácteos. El presente estudio tuvo como objetivo investigar la relación entre el recuento bacteriano total (TCC) y el aislamiento de hongos filamentosos y levaduras en muestras de leche del tanque de expansión. La leche de 160 granjas se monitoreó durante 6 meses para el recuento de células somáticas (CCS) y la TCC por métodos oficiales. Se analizaron muestras de 120 propiedades para detectar TCC y aislamiento fúngico. En 102 muestras (85%) de hongos filamentosos (Acremonium sp., Alternaria spp., Aspergillus sp., Cladosporium sp., Fusarium sp., Mucor spp., Penicillium sp.) y / o Candida sp., Geotrichum sp., Pichia sp., Prothoteca sp., Rodothorula sp., Trichosporon sp.) con un promedio de 1,284 UFC/mL y CBT de 133,000 UFC /mL. En 14 muestras negativas para hongos, se obtuvo un promedio de 652,000 UFC/mL para TCC. La diferencia en la TCC entre muestras positivas y negativas para hongos fue significativa (p <0.001), lo que demuestra la influencia de los hongos en el crecimiento bacteriano y la TCC de la leche. Se debe investigar la presencia de hongos y el riesgo potencial de producción de toxinas en la leche cruda y sus derivados, así como la relación entre el aislamiento de hongos y la baja TCC de la leche.No Brasil, de um modo geral, o leite é obtido em condições higiênico-sanitárias deficientes, em consequência, apresenta elevado número de microrganismos contaminantes. O presente trabalho objetivou investigar a relação entre contagem bacteriana total (CBT) e o isolamento de fungos filamentosos e leveduras em amostras de leite do tanque de expansão. O leite de 160 propriedades foi monitorado por 6 meses quanto à contagem de células somáticas (CCS) e CBT por métodos oficiais. Foram analisadas amostras de 120 propriedades quanto à CBT e isolamento de fungos. Em 102 amostras (85%) foram isolados fungos filamentosos (Acremonium sp., Alternaria spp., Aspergillus sp., Cladosporium sp., Fusarium sp., Mucor spp., Penicillium sp.) e/ou leveduras Candida sp., Geotrichum sp., Pichia sp., Prothoteca sp., Rodothorula sp., Trichosporon sp.) com média de 1.284 UFC/mL e CBT de 133.000 UFC/mL. Em 14 amostras negativas para fungos obteve-se uma média de 652.000 UFC/mL para a CBT. A diferença da CBT entre amostras positivas e negativas para fungos foi significativa (p<0,001), demonstrando a influência dos fungos sobre o crescimento bacteriano e a CBT do leite.
