Good practices for the marketing of food ready for consumption in public markets in Recife-PE

Resumo: In recent years, concern for food security has been growing in the population due to the increase in foodborne diseases. Considering that traders in public markets routinely provide food to the population, it is necessary to seek means to ensure their access to information, ensuring effective intervention in the risks inherent to the consumption of low hygienic and sanitary quality foods. The objective of this study was to evaluate the hygienic and sanitary conditions for the commercialization of food in public markets in Recife - PE. This is an exploratory, descriptive study with quantitative approach, carried out in the main public markets of the city of Recife - PE, which met the eligibility criteria, being the sampling of the intentional type. Municipal Markets that sell food ready for human consumption were included; physical commercial establishments; located in the City of Recife. The sample was composed of food merchants from the 15 public markets of Recife-PE. It was observed that 65.4% of the participants in the study were female, with the age group between 18 and 60 years, it was also observed that 49% of the participants attended high school. It was observed that in 53.3% of the physical commercial establishments (boxes or stores) analyzed, the handlers used drinking water, a low percentage since water and an indispensable item for all stages of food preparation. Most merchants do not follow hygienic and sanitary standards which generates the compromise of the quality of the food that will be consumed.

Teniendo en cuenta que los comerciantes de los mercados públicos proporcionan habitualmente alimentos a la población, es necesario buscar medios para garantizar su acceso a la información, garantizando una intervención eficaz en los riesgos inherentes al consumo de alimentos de baja calidad higiénica y sanitaria. El objetivo de este estudio era evaluar las condiciones higiénicas y sanitarias para la comercialización de alimentos en los mercados públicos de Recife - PE. Se trata de un estudio exploratorio y descriptivo con enfoque cuantitativo, realizado en los principales mercados públicos de la ciudad de Recife -PE, que cumplía con los criterios de elegibilidad, siendo el muestreo del tipo intencional. Se incluyeron mercados municipales que venden alimentos listos para el consumo humano; establecimientos comerciales físicos; situado en la ciudad de Recife. La muestra estaba compuesta por comerciantes de alimentos de los 15 mercados públicos de Recife-PE. Se observó que el 65,4% de los participantes en el estudio eran mujeres, con el grupo de edad entre 18 y 60 años, también se observó que el 49% de los participantes asistían a la escuela secundaria. Se observó que en el 53,3% de los establecimientos comerciales físicos (cajas o tiendas) analizados, los manipuladores utilizaban agua potable, un porcentaje bajo desde el agua y un artículo indispensable para todas las etapas de preparación de alimentos. La mayoría de los comerciantes no cumplen con las normas higiénicas y sanitarias que generan el compromiso de la calidad de los alimentos que se consumirán.Nos últimos anos, vem crescendo na população a preocupação com a segurança alimentar, devido ao aumento de doenças transmitidas por alimentos. Considerando que os comerciantes de mercados públicos fornecem rotineiramente alimentos para a população, faz-se necessário buscar meios que garantam o seu acesso à informação, assegurando efetiva intervenção nos riscos inerentes ao consumo de alimentos de baixa qualidade higiênico-sanitária. Objetivou-se avaliar as condições higiênico-sanitária para a comercialização de alimentos em mercados públicos do Recife – PE. Trata-se de um estudo do tipo exploratório, descritivo com abordagem quantitativa, realizado nos principais Mercados públicos da Cidade do Recife - PE, que se enquadraram nos critérios de elegibilidade, sendo a amostragem do tipo intencional. Foram incluídos os Mercados Municipais que comercializam alimentos prontos para consumo humano; estabelecimentos comerciais físicos; localizados na Cidade do Recife. A amostra foi composta pelos comerciantes de alimentos dos 15 mercados públicos do Recife-PE. Foi observado que 65,4% dos participantes da pesquisa eram do sexo feminino, com a faixa etária entre 18 e 60 anos, observou-se também que 49% dos participantes cursaram o ensino médio. Observou-se que em 53,3% dos estabelecimentos comerciais físicos (boxes ou lojas) analisados, os manipuladores utilizavam água potável, um percentual baixo já que a água e um item indispensável para todas as etapas do preparo do alimento.
