RELATIONSHIP BETWEEN THE OCCURRENCE OF ENTEROPARASITOSIS AND HYGIENE PRACTICE OF FOOD HANDLERS: A REVIEW OF THE LITERATURE

Resumo: | Economic development and life style changes have brought about an increase for food services. Food handling is one of the main causes in contamination since inadequate hygiene habits favor the spread of disease-causing microorganisms. Intestine parasites are still one of the main public health problems contaminating millions of people worldwide. Current research investigates the relationship between the occurrence of enteroparasitosis and hygiene practices in food handlers described in the literature. Data survey from the literature published between 2000 and 2012 in journals and magazines, in Portuguese and in foreign languages, at the Scielo research site, was analyzed. Several research works showed the relationship between food handlers and food-caused diseases. This is due to the fact that incorrect handling and the lack of hygiene care favor contamination by pathogenic microorganisms. Several studies also report that food handling in poor hygiene conditions is an important factor in the transmission of enteroparasites. Normally food handlers have low social and economical level which may jeopardize the adoption of good hygiene practices. The health of food handlers should be evaluated by periodic laboratory tests, coupled to training and sanitary education to lessen possible contamination and dissemination of diseases transmitted by food. |

A manipulação é uma das formas mais importantes de contaminação de alimentos, pois hábitos higiênicos inadequados permitem que microrganismos causadores de doenças sejam propagados. Os parasitos intestinais ainda constituem um dos mais sérios problemas de saúde pública, afetando milhões de pessoas em todo o mundo. O objetivo deste trabalho foi investigar a relação entre a ocorrência de enteroparasitoses e práticas de higiene de manipuladores de alimentos descritos na literatura atual. Trata-se de um levantamento de dados da literatura entre os anos de 2000 e 2012, no acervo de revistas e periódicos, no idioma português e língua estrangeira, no site de pesquisa Scielo. Em várias pesquisas, tem-se demonstrado a relação existente entre manipuladores de alimentos e doenças de origem alimentar, pois uma manipulação incorreta e a falta de cuidados em relação às normas higiênicas favorecem a contaminação por microrganismos patogênicos. Estudos também relatam que a manipulação de alimentos em condições precárias de higiene é um fator importante na transmissão de enteroparasitas. Em relação aos manipuladores de alimentos observa-se que estes possuem baixo nível socioeconômico, o que pode prejudicar na adoção das boas práticas de higiene.
