Quality Management in the Food Sector: A Case Study in a Fridge

Resumo: This article aimed to verify the existence of the Quality Management System in a fridge. For that, a qualitative research, of exploratory character and classified as to the procedures, was carried out as a case study. For the data collection, the structured interview technique was used. For the interpretation of the data, the technique of discourse analysis was used. The main results pointed out that the company does not fit into the quality systems approached throughout the article, such as the Total Quality Management system, 5S, or Statistical Quality Control. It aims at quality based on mandatory programs, such as health surveillance and also state inspection of the product. On the other hand, the company uses Quality Management, as it understands that it can bring more efficiency and competitive security. It should be emphasized that the fridge uses Quality Management in its processes by monitoring the employees themselves in the temperature control of the cold rooms and PH of the meat, in order to avoid production errors and to guarantee the quality of the products.

Para ello, se realizó una investigación cualitativa, de carácter exploratorio y clasificado en cuanto a los procedimientos, como un estudio de caso. Para la recolección de datos, se utilizó la técnica de entrevista con guión estructurado. Para la interpretación de los datos, se empleó la técnica de análisis del discurso. Los principales resultados apuntaron que la empresa no se encuadra en cuanto a los sistemas de calidad abordados en el transcurso del artículo, como el sistema de la Gestión de la Calidad Total, 5S, o Control Estadístico de Calidad. La misma apunta a la calidad con base en los programas obligatorios, como la vigilancia sanitaria y también la inspección estadual del producto. Por otro lado, la empresa utiliza la Gestión de la Calidad, pues entiende que la misma puede traer más eficiencia y seguridad competitiva. Se resalta que el frigorífico utiliza la Gestión de la Calidad en sus procesos por medio del monitoreo de los propios empleados en el control de temperatura de las cámaras frías y PH de la carne, con la intención de evitar errores de producción y garantizar la calidad de los productos.Este artigo teve por objetivo verificar a existência do Sistema de Gestão da Qualidade em um frigorífico. Para tanto, realizou-se uma pesquisa qualitativa, de caráter exploratório e classificado quanto aos procedimentos, como um estudo de caso. Para a coleta de dados, utilizou-se a técnica de entrevista com roteiro estruturado. Para a interpretação dos dados, empregou-se a técnica de análise do discurso. Os principais resultados apontaram que a empresa não se enquadra quanto aos sistemas de qualidade abordados no decorrer do artigo, como o sistema da Gestão da Qualidade Total, 5S, ou Controle Estatístico de Qualidade. A mesma visa a qualidade com base nos programas obrigatórios, como a vigilância sanitária e também a inspeção estadual do produto. Por outro lado, a empresa utiliza a Gestão da Qualidade, pois entende que a mesma pode trazer mais eficiência e segurança competitiva.
