Evaluation of storage school storage conditions in schools of the southeast zone of Teresina-Piauí-Brazil

Resumo: | The objective of this research was to evaluate the origin and storage conditions of school meals in schools of the municipal network of the southeast zone of Teresina-Piauí-Brazil. The survey was conducted in 46 schools. The questionnaire used was based on the School Lunch Storage Inspection Guide of the Municipality of Fortaleza, Ceará, the questionnaire items were grouped, by subject, into eleven blocks. It was observed that for the block receiving raw material and storage area organization it was found that only 42.0% (ten) and 50.0% (eleven) of the elementary and elementary schools, respectively, present a adequate cold network. For the block physical conditions of the storage area, only 58.0% (fourteen) of elementary schools and 82.0% (eighteen) of elementary school have an exclusive area to store food. For the manipulative block it was found that 46.0% (eleven) and 91.0% (twenty) of the nursery schools of elementary and elementary schools, respectively, use the cap and apron for food handling. In the lectures it was observed that from 46 surveyed schools we had the participation of 76.0% (35 lunch boxes). The main irregularities refer to cold storage conditions, presence of pests in the storage area, existence of exclusive physical area for the storage of groceries, physical structure of the storage area, mainly related to the items walls and doors. |

La encuesta se realizó en 46 escuelas y el cuestionario utilizado se basó en la Guía de inspección de almacenamiento de almuerzos escolares del municipio de Fortaleza, Ceará, los ítems del cuestionario se agruparon, por materia, en once bloques. Se observó que para el bloque que recibe la materia prima y la organización del área de almacenamiento se encontró que solo el 42.0% (diez) y el 50.0% (once) de las escuelas primarias y elementales, respectivamente, presentan un Red de frío adecuada. Para las condiciones físicas del bloque del área de almacenamiento, solo el 58.0% (catorce) de las escuelas primarias y el 82.0% (dieciocho) de las escuelas primarias tienen un área exclusiva para almacenar alimentos. Para el bloque manipulador se encontró que 46.0% (once) y 91.0% (veinte) de las guarderías de las escuelas primarias y elementales, respectivamente, usan la gorra y el delantal para el manejo de alimentos. En las conferencias se observó que de 46 escuelas encuestadas tuvimos la participación del 76.0% (35 cajas de almuerzo). Las principales irregularidades se refieren a las condiciones de almacenamiento en frío, la presencia de plagas en el área de almacenamiento, la existencia de un área física exclusiva para el almacenamiento de comestibles, la estructura física del área de almacenamiento, principalmente relacionada con las paredes y puertas de los artículos.Com esta pesquisa objetivou-se avaliar a origem e as condições de armazenamento da merenda escolar nas escolas da rede municipal da zona Sudeste de Teresina-Piauí-Brasil. A pesquisa foi realizada em 46 escolas, o questionário utilizado foi baseado no Roteiro de Inspeção do Armazenamento da Merenda Escolar da Prefeitura Municipal de Fortaleza, Ceará, os itens dos questionários foram agrupados, por assunto, em onze blocos. Observou-se que para o bloco recebimento da matéria-prima e organização da área de armazenamento verificou-se que apenas 42,0% (dez) e 50,0% (onze) das escolas do ensino infantil e fundamental, respectivamente, apresentam uma rede de frio adequado. Para o bloco condições físicas da área de armazenamento apenas 58,0% (quatorze) das escolas do ensino infantil e 82,0% (dezoito) do ensino fundamental possuem área exclusiva para armazenar alimentos. Para o bloco manipulador constatou-se que 46,0% (onze) e 91,0% (vinte) das merendeiras das escolas do ensino infantil e fundamental, respectivamente, usam o gorro e o avental para a manipulação dos alimentos. Nas palestras observou-se que de 46 escolas pesquisadas tivemos a participação de 76,0% (35 merendeiras). Dentre as principais irregularidades temos às condições de armazenamento de frios, um controle de pragas inexisten na área de estocagem, falta de existência de área física exclusiva para depósito dos mantimentos, estrutura física da área de armazenamento, principalmente, relacionado com os itens paredes e portas.
