Comparative microbiological analysis of rennet cheese sold in supermarkets and street markets in Maceió City – Alagoas

Resumo: The rennet cheese produced in Northeastern Alagoas State is well known in Brazil. In addition, it is appreciated and consumed by the local population. Although this cheese type represents a segment of local economic importance, most of its production remains handcrafted, without proper technology using. The aim of the current study is to assess the microbiological quality of rennet cheese sold in supermarkets and street markets in Maceió (AL), in order to compare hygienic sanitary conditions between samples. A total of 24 samples rennet cheese samples were analyzed for total coliforms, as well as to investigate the incidence of coagulase-positive Staphylococcus and Salmonella sp. Results have suggested greater contamination with total coliforms and incidence of Salmonella sp. in artisanal rennet cheese samples. Larger number of cheese samples sold in supermarkets recorded positive results for coagulase-positive Staphylococcus. It was possible concluding that the herein analyzed rennet cheese samples did not meet the required microbiological quality standards. This outcome has indicated likely failure in production, transportation, storage and trading processes, which represents risks to human health.

A pesar de representar un segmento de importancia económica local, la mayor parte de su producción se sigue llevando a cabo de manera artesanal, sin el uso de la tecnología adecuada. En efecto, el objetivo de este trabajo fue evaluar la calidad microbiológica del queso Coalho que se vende en supermercados y ferias libres en el municipio de Maceió - AL, con el fin de comparar las condiciones higiénico sanitarias encontradas entre las muestras.  Fueron analizadas veinticuatro muestras de queso Coalho para la aparición de coliformes totales, Staphylococcus coagulase positivo y la investigación de la Salmonella sp. Los resultados sugieren una mayor contaminación por coliformes totales y la presencia de Salmonella sp en muestras artesanales. En cuanto al conteo de Staphylococcus coagulase positivo, fue evidenciado un mayor número de muestras con valores positivos para aquellas que fueron comercializadas en supermercados. Se concluye que las muestras de queso Coalho analizadas no están dentro de los estándares de calidad microbiológico requeridos, indicando posibles fallas en la producción, transporte, almacenamiento y comercialización, lo que representa un riesgo para la salud.O queijo de coalho produzido na região Nordeste do estado é popularmente conhecido no Brasil, sendo apreciado e consumido pela população local. Apesar de representar um segmento de importância econômica local, a maior parte de sua produção é ainda realizada de maneira artesanal, sem o uso de tecnologia apropriada. O objetivo desse trabalho foi avaliar a qualidade microbiológica do queijo coalho comercializado em supermercados e feiras livres no município de Maceió – AL, com o intuito de comparar as condições higiênico sanitárias encontradas entre as amostras. Foram analisadas 24 amostras de queijo de coalho quanto a ocorrência de coliformes totais, Staphylococcus coagulase positivo e pesquisa de Salmonella sp. Os resultados sugerem uma maior contaminação por coliformes totais e presença de Salmonella sp em amostras artesanais. Com relação a contagem de Staphylococcus coagulase positiva, foi evidenciado maior número de amostras com valores positivos para aquelas comercializadas em supermercados.
