Resumo: In the search of techniques that can helps in the reduction of microorganisms that can be present during slaughter, research is being done with the use of organic acids and essential oils as a sanitizer for the carcasses. The objective of the present study was to evaluate the influence of pre-slaughter fasting on broilers on weight loss and contamination by Salmonella spp. in the crop and the efficacy of the carcasses bath with a blend of organic acids and essential oil in the reduction of microorganisms indicate contamination. Three lots of broiler chickens from an integration were evaluated, and only two lots were evaluated for weight loss after the fasting period. Samples of 40 broilers were taken from each lot. The product used was diluted in concentrations of 4, 8 and 12%. The analysis of the presence of contamination indicator microorganisms was made: (1) before the final toilet; (2) after the final toilet and (3): after the chiller. It was found that weight loss varied between the two lots evaluated. The aerobic mesophiles count was reduced in the concentration of 12% of the commercial blend after the final toilet. The cooling ( chiller) of the carcass was efficient in reducing aerobic mesophiles count in 66.6% (2/3) of the lots. Coliforms at 45°C were presented in 66.6% (2/3) of the lots and the count of psychrotrophic microorganisms varied between the lots evaluated. Further studies are needed to evaluate the effect of the blend directly in the final toilet shower, in order to evaluate its effectiveness on a large scale of production.

El objetivo del presente estudio fue evaluar la influencia del ayuno previo  al sacrificio en los pollos de engorde sobre la pérdida de peso y la contaminación por Salmonella spp. del cultivo y eficacia del baño de las canales con una mezcla de ácidos orgánicos y aceite esencial en la reducción de microrganismos indicadores de contaminación. Se evaluaron tres lotes de pollos de engorde de una integración y la pérdida de peso después del período de ayuno solo se evaluó  en dos lotes. Se tomaron muestras de 40 pollos de cada lote. El producto utilizado se diluyó en concentraciones de 4, 8 y 12%. El análisis de la presencia de microrganismos indicadores de contaminación se realizó: (1) antes del baño final; (2) después del baño final y (3) después del esfriador (chiller). Se encontró que la pérdida de peso varió entre los dos lotes evaluados. El recuento de mesófilos aeróbicos se redujo en  12% de la mezcla comercial. El enfriamento (chiller) de la canal resultó eficaz para reducir el recuento de mesófilos aeróbicos en la 66,6% (2/3) de los lotes. Los coliformes a 45°C estuvieron presentes en 66,6% (2/3) y el conteo de microrganismos psicrotróficos varió entre los lotes evaluados. Se necesitan más estudios para evaluar el efecto de la mezcla directamente en la ducha del inodoro final, con el fin de evaluar su eficacia a gran escala de produccíon.Na busca de técnicas que possam auxiliar na redução de micro-organismos que podem estar presentes durante o abate, pesquisas estão sendo feitas com o uso dos ácidos orgânicos e óleos essenciais como sanitizante das carcaças. O objetivo do presente trabalho foi avaliar a influência do jejum pré-abate de frangos de corte na perda de peso e contaminação por Salmonella spp. do papo e eficácia do banho das carcaças com um blend de ácidos orgânicos e óleo essencial na redução de micro-organismos indicadores de contaminação. Foram avaliados três lotes de frangos de corte de uma integração, sendo que somente em dois lotes foi avaliado a perda de peso após o período de jejum. De cada lote foram colhidas amostras de 40 aves. O produto utilizado foi diluído nas concentrações de 4, 8 e 12%. A análise da presença de micro-organismos indicadores de contaminação foi feita: (1) antes da toalete final; (2) após a toalete final e (3) após o chiller. Verificou-se que a perda de peso variou entre os dois lotes avaliados. A contagem de mesófilos aeróbios foi reduzida na concentração de 12% do blend comercial. O resfriamento (chiller) das carcaças foi eficiente em reduzir a contagem de mesófilos aeróbios em 66,6% (2/3) dos lotes. Os coliformes à 45ºC estavam presentes em 66,6% (2/3) e a contagem dos micro-organismos psicrotróficos variou entre os lotes avaliados.
