Gastronomy and Tourism Development: a systematic literature review

Resumo: | This article aims to verify and analyze the scientific production regarding the role of gastronomy in the tourist development of the destination. For that, studies were selected from the Scopus database through the combination of keywords "gastronomy" and "development" and "tourism". As a result, 104 documents were found, and these were selected based on the title, abstract reading, objectives, methodologies, and for being relevant and coherent in approach to the researched topic, integrating a set of 21 studies. The works were analyzed using the Systematic Literature Review methodology, with a quantitative and qualitative approach to the data. It is concluded that it is necessary to value the combination of gastronomy and tourism development, in order to offer a product that fits the tourist consumer, being effective to meet the needs of the contemporary consumer. |

Para ello, los estudios se seleccionaron de la base de datos Scopus a través de la combinación de palabras clave "gastronomía", "desarrollo" y "turismo". Como resultado, se encontraron 104 documentos, y estos se seleccionaron en función del título, la lectura del resumen, los objetivos, las metodologías y porque son relevantes y coherentes al abordar el tema investigado, integrando un conjunto de 21 estudios. Los trabajos se analizaron utilizando la metodología de revisión sistemática de literatura, con un enfoque cuantitativo y cualitativo de los datos. Se concluye que es necesario valorar la combinación de la gastronomía y el desarrollo turístico para ofrecer un producto que se adapte al consumidor turístico y que sea efectivo para satisfacer las necesidades del consumidor contemporáneo.Este artigo tem como objetivo verificar e analisar a produção científica no tocante ao papel da gastronomia no desenvolvimento turístico do destino. Para tanto, foram selecionados estudos a partir da base de dados Scopus por meio da combinação de palavras-chave “gastronomy”, “development” e “tourism”. Como resultado encontraram-se 104 documentos, e estes foram selecionados com base no título, leitura do abstract, objetivos, metodologias, e por serem relevantes e coerentes em aproximação ao tema pesquisado, integrando um conjunto de 21 estudos. Os trabalhos foram analisados utilizando a metodologia Revisão Sistemática da Literatura, com abordagem quantitativa e qualitativa dos dados.
