Fasting time and stomach content in pigs slaughtering

Resumo: | The objective of this work was to observe, through the monitoring of pre-slaughter management and slaughter of pigs, the effects of fasting time on the farm (six, eight, ten and twelve hours) and the resting period of pigs in the slaughterhouse, as well as stomach content, average carcass weight and hot carcass yield. The observation was carried out in a large slaughterhouse in the State of Rio Grande do Sul, registered with the Serviço de Inspeção Federal (SIF), starting at the swine farm located near the slaughterhouse, where, prior to the day of slaughter, 320 females were divided in 4 batches of 80 animals and each batch received the last meal, six, eight, ten and twelve hours before the scheduled time for loading, with the rest of the period fasting on the farm. All management steps prior to slaughter were monitored to measure the times performed, as well as the slaughter of these animals for the collection of weight, yield and stomach contents, the latter being done by turning the contents of 35 units of stomachs per batch. The results found for the rest period and water diet of each batch at the slaughterhouse ranged from 07h:40min to 08h:40min, the total fasting time ranged from 21h:50 min to 16h:40 min, the weight of the total wet solid content found in the stomachs ranged from 704.90 g to 1,273.30 g, minimum weight of females was 92.10 kg and maximum weight of 96.85 kg, and yield ranging from 72.52% to 74.64%. The results presented for the fasting times of the applied pigs meet the standard of stomach content tolerated by the industry, without interfering with the average carcass weight, condemnation by contamination in evisceration and hot carcass yield. |

La observación se realizó en un gran matadero del Estado de Rio Grande do Sul, registrado en el Serviço de Inspeção Federal (SIF), a partir de la granja porcina ubicada cerca del matadero, donde, antes del día del sacrificio, 320 hembras fueron divididos en 4 lotes de 80 animales y cada lote recibió la última comida, seis, ocho, diez y doce horas antes de la hora prevista para la carga, con el resto del período en ayunas en la granja. Se monitorearon todos los pasos de manejo previos al sacrificio con el fin de medir los tiempos realizados, así como el sacrificio de estos animales para la toma de peso, rendimiento y contenido estomacal, realizándose este último volteando el contenido de 35 unidades de estómago por lote. Los resultados encontrados para el período de descanso y dieta hídrica de cada lote en el matadero varió de 07h:40min a 08h:40min, el tiempo total de ayuno varió de 21h:50 min a 16h:40 min, el peso del contenido total de sólidos húmedos encontrado en los estómagos varió de 704,90 g a 1273,30 g, el peso mínimo de las hembras fue de 92,10 kg y máximo de 96,85 kg y el rendimiento varió de 72,52% a 74,64%. Los resultados presentados para los tiempos de ayuno de los cerdos aplicados cumplen con el estándar de contenido estomacal tolerado por la industria, sin interferir con el peso promedio de la canal, decomiso por contaminación en evisceración y rendimiento de canal caliente.O objetivo deste trabalho foi observar, por meio do acompanhamento do manejo pré-abate e de abate de suínos, os efeitos do tempo de jejum na granja (seis, oito, dez e doze horas) e do período de descanso dos suínos no frigorífico, como também o conteúdo estomacal, o peso médio de carcaças e o rendimento de carcaças quentes. A observação foi realizada em um frigorífico de grande porte do Estado do Rio Grande do Sul, registrado no Serviço de Inspeção Federal (SIF), iniciando na propriedade de criação de suínos localizada próxima ao abatedouro, onde anterior ao dia de abate 320 fêmeas foram divididas em 4 lotes de 80 animais e cada lote recebeu a última refeição, seis, oito, dez e doze horas antes do horário previsto para o carregamento, ficando o restante do período em jejum na granja. Todas as etapas de manejo anterior ao abate foram acompanhadas a fim de mensurar os tempos realizados, como também o abate destes animais para a coleta do peso, rendimento e conteúdo estomacal, este último, sendo feito através da viragem do conteúdo de 35 unidades de estômagos por lote. Os resultados encontrados para o período de descanso e dieta hídrica de cada lote no abatedouro variou entre 07h:40min a 08h:40min, o tempo de jejum total variou de 21h:50 min a 16h:40 min, o peso do conteúdo sólido úmido total encontrado nos estômagos variou de 704,90 g à 1.273,30 g e peso mínimo das fêmeas foi de 92,10 kg e máximo de 96,85 kg e rendimento variando de 72,52% a 74,64%.
