Resumo: | Coconut water is a drink rich in electrolytes and can be used to help maintain body hydration. It has nutrient richness and high water activity, thus favoring the development of microorganisms, which in turn can alter the final quality of the product. Thus, the objective of the present research was to perform the microbiological, physicochemical and labeling characterization of bottled coconut waters. Thirty samples of bottled coconut water sold under refrigeration conditions in supermarkets were collected. Microbiological, physicochemical and nutritional labeling analyzes were performed. The presence of Salmonella spp. in 10% of the analyzed samples and high incidence of total coliforms. In addition, 80% of the samples were out of ideal cooling conditions, the same percentage in disagreement with the standards set by pH legislation and 100% of the irregular samples for titratable acidity. However, all samples were regular with respect to labels. Thus, the coconut waters marketed in the municipality of Mossoró / RN need greater hygiene-sanitary care and cooling conditions, in order to contribute to a safe drink for human consumption. |

Tiene una riqueza de nutrientes y una alta actividad del agua, lo que favorece el desarrollo de microorganismos, que a su vez pueden alterar la calidad final del producto. Por lo tanto, el objetivo de la presente investigación fue realizar la caracterización microbiológica, fisicoquímica y de etiquetado de las aguas de coco embotelladas. Se recogieron treinta muestras de agua de coco embotellada vendida en condiciones de refrigeración en supermercados. Se realizaron análisis de etiquetado microbiológico, fisicoquímico y nutricional. La presencia de Salmonella spp. en 10% de las muestras analizadas y alta incidencia de coliformes totales. Además, el 80% de las muestras estaban fuera de las condiciones ideales de enfriamiento, el mismo porcentaje en desacuerdo con los estándares establecidos por la legislación de pH y el 100% de las muestras irregulares para acidez titulable. Sin embargo, todas las muestras fueron regulares con respecto a las etiquetas. Por lo tanto, las aguas de coco comercializadas en el municipio de Mossoró / RN necesitan mayores condiciones higiénico-sanitarias y de enfriamiento, para contribuir a una bebida segura para el consumo humano.A água de coco é uma bebida rica em eletrólitos, podendo ser utilizada para auxiliar a manter a hidratação corporal. Apresenta riqueza em nutrientes e elevada atividade de água que, favorecendo assim o desenvolvimento de micro-organismos, que por sua vez pode alterar a qualidade final do produto. Sendo assim, o objetivo da presente pesquisa foi realizar a caracterização microbiológica, físico-química e de rotulagem de águas de coco envasadas. Para tanto, foram coletadas trinta amostras de água de coco envasadas comercializadas em condições de refrigeração em supermercados. Foram realizadas análises microbiológicas, físico-química e de rotulagem nutricional. Foi constatada a presença de Salmonella spp. em 10% das amostras analisadas e alta incidência de coliformes totais. Além disso, 80% das amostras estavam fora das condições de resfriamentos ideais, o mesmo percentual em desacordo com os padrões estabelecidos pela legislação para pH e 100% das amostras irregulares quanto à acidez titulável. No entanto, todas as amostras estavam regulares em relação aos rótulos.
